Pear Bundt Cake Recipe
  • Prep: 15 min. Bake: 50 min.
  • Yield: 16 Servings

Ingredients

  • 1 can (15 ounces) reduced-sugar sliced pears
  • 1 package white cake mix (regular size)
  • 2 egg whites
  • 1 egg
  • 2 teaspoons confectioners' sugar

Directions

  • Drain pears, reserving the syrup; chop pears. Place pears and syrup in a large bowl; add the cake mix, egg whites and egg. Beat on low speed for 30 seconds. Beat on high for 4 minutes.
  • Coat a 10-in. fluted tube pan with cooking spray and dust with flour. Add batter.
  • Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar. Yield: 16 servings.

Nutritional Analysis: One slice equals 163 calories, 4 g fat (1 g saturated fat), 13 mg cholesterol, 230 mg sodium, 30 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 starch, 1 fruit, 1 fat.

This cake should be made as is, and more drained pears can be added after mixing. The pears and juice are used in place if the oil. So having them purée in the mix is what it's supposed to do. I add an additional half can of pears, that I chop, along with about 1/2 to 2/3 cup of chopped walnuts. Also, if you're your powdered sugar disappears, your cake is not completely cooled. A glaze that hardens is a good alternative if you want that little bit of extra taste and sweetness.

but the cake stuck to the bundt pan. I tried all my usual methods of removing cake from pan but this time it did not work. I will make something out of this to salavage it instead of a total loss. One thought is to put in dessert dishes with a scoop of ice cream or spoonfull of pudding.

You have to use more pears.....they are so mild they can hardly be tasted.

We enjoyed this cake, but next time I will make a few adjustments, i.e., I will cut the pears in larger pieces and stir them in toward the end of the mixing time as they weren't really in evidence this time around. I also had the problem of the "disappearing powdered sugar. I also think I will try topping it with some strawberry or plain Cool Whip rather than the sugar.

I have made this cake several times. It is great everytime. My husband asks for it when he needs something light and sweet. Have ussed fruit cocktail and peaches, both work well.

This was great and so easy. Hard to believe but it's better the longer it sits. I find it gets a great chewy texture.

We made this recipe the week it was posted on Taste of Home. The pears make this cake out of this world. It was light and very tasty! We opted to leave the pears in large chunks - it really helps spread the pear flavor throughout the cake.  Can't wait to try it with peaches, mandarin oranges or maybe even some of the fruit cocktail that is in cherry juice. YUMMY! 5 STARS!

I used a yellow cake mix, eggbeaters instead of the whites and added some cinnamon and nutmeg. It was lovely.

Didn't even taste like pears was in it it tasted just like white cake but was very moist.

The taste of pears was not very strong. Might try it with canned peaches next time. I used a cake mix tieh "double the pudding" in it and it was so moist and tender that it was hard to cut.

This cake was OK, very plain. Could not taste any pears so it was a white cake with no frosting. And the sugar was gone in an hour or so, had to add more

I love this cake I cool it and cut it into slices which I wrap well and freeze them. I now can have a peice of it anytime I want it.

Made this cake for a card party of 12 women. We all loved it! very simple, very moist and very tasty. I had used my own pears that I canned from our pear tree. Only problem....I made the cake the day before, I had to re-apply the icing sugar 3x. It kept 'melting'. I now know I should have addded the icing sugar just before serving but does anyone have suggestions on storage so this wouldn't happen?

My comment is for the Cran-apple Walnut Cake. That is one of the best cakes I have ever made. It did take a bit long to prepare, but the time was well spent. The cake was delicious.

This cake was heavenly. So easy with terrific results. Got lots of yums & oohs when my coworkers tried it & it's already been requested for an upcoming birthday cake request.

I MADE THIS CAKE, I DID ADD A TABLESPOON OF SOUR CREAM, ALSO A PACK OF CHEESECAKE PUDDYING TO IT AND IT MADE IT SO MOIST, I ALSO MELTED A SMALL AMOUT OF WHITE ICING AND POURED OVER IT, EVERYONE LOVED IT THIS WAY..............

This cake was really moist & tasted wonderful. I was disappointed that it didn't have more of a pear flavor to it. Next time I will put the chopped pears in after mixing the other ingredients. I took it to work, & it was gone in no time. Everyone said how good it was. I will definitely bake this one again!

I did not have a white cake mix, so I used a yellow one. I also added some cinnamon & nutmeg, and some walnuts. It was a wonderful tasting cake, and even better a few days after making it. I live alone, so I shared it with neighbors who also enjoyed it.

This was really delicious and SO easy! Please give it a try. I added 1/2 teaspoon of nutmeg to the batter and 1/2 cup of chopped pecans. Everyone loved it!

Made this as a dessert for dinner with my in-lsws. My MOther-in-Law found it a bit sweet, which was an excellent point as far as my Father-in-Law was concerned!! My husband said there wasn't as much of a pear taste as he would have liked. I liked the sponge cake consistency, but was a bit disappointed that about the pear taste as well. If I make it again, I think I'll use (2) cans of pears. The second can just for the pears only and stirring them in to get a bit more moistness.

I would suggest you buy a can of pears, measure the syrup, measure the pears, make note of it so next time you make the cake you can use your own canned pears.

I preserve my own pears and would have a 32 ounce jar of pears. I would need to know the amount of syrup in the recipe and the amount of pears. Can someone supply me with that. It is hard sometimes when you don't use sote bought mixes and canned goods.
