Peanut Butter Sandwich Cookies Recipe
  • Prep: 20 min. Bake: 10 min./batch + cooling

Ingredients

  • 1 cup butter-flavored shortening
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • FILLING:
  • 1/2 cup creamy peanut butter
  • 3 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 5 to 6 tablespoons milk

Directions

  • In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy, about 4 minutes. Beat in eggs and vanilla. Combine the flour, baking soda and salt; add to creamed mixture and mix well.
  • Shape into 1-in. balls and place 2 in. apart on ungreased baking sheets. Flatten to 3/8-in. thickness with fork. Bake at 375° for 7-8 minutes or until golden. Remove to wire racks to cool.
  • For filling, in a large bowl, beat the peanut butter, confectioners' sugar, vanilla and enough milk to achieve spreading consistency. Spread on half of the cookies and top each with another cookie. Yield: 44 sandwich cookies.

I made two batches of these cookies -- one with butter and one with butter-flavored shortening. Shortening gives the cookies a softer, chewier texture and allows them to hold a nice shape. But as far as flavor, butter wins all the way. If you chill the dough before baking them, you can keep butter-based cookies from spreading or becoming too crunchy (providing you don't overbake!).

obscenely sweet - my kids didn't even finish ONE. I guess if you like super sweet stuff, they would be good - but I actually had to make scrambled eggs with salt just to get the sugar taste out of my mouth. Even after brushing.

What a great recipe. I had to fend off my husband and kids while the cookies cooled on the baker's rack. My husband did mention after I sandwiched them together that they tasted great plain, all on their own. This is definately my new plain peanut butter cookie recipe.

just made these cookies for my husband to welcome him home from hunting camp and they are awesome. i did not have butter-flavored shortening so i just used 1/2 shorting and 1/2 butter. there were a little lighter than the picture. but still great..

I was in the mood for peanut butter cookies and wanted to try something different and I believe I have discovered my favorite peanut butter cookie recipe. These are SOOO good! The only complaint I have is for some reason mine didn't come out the size they show in the picture they turned out HUGE and flat. I didn't make huge cookie dough balls either. They are a little hard, but still taste GREAT with the frosting and as others said they are perfect by themselves. I debated whether not to make the frosting, but I wanted to see how good the recipe is when you do it up all the way. The frosting REALLY adds a lot lot too them. I may use the frosting to make some regular chocolate chip cookie sandwhiches with a hint of peanut butter flavor! There are so many ways you can alter this recipe. I look forward to playing with it. Next time I want to make them fancier and drizzle some chocolate on top. Thank you for the GREAT recipe I know it will be one I go to again and again!

Amazing cookies, simply one of my favorites! I saw someone ask if you can use butter instead of shortening: YES!! It turns out even better, in my opinion, as I am not one to like the smell or flavor of shortening. Butter worked perfect and made the cookies all the more incredible!

These cookies are my go-to for Peanut Butter cookies. The recipe makes a lot! So sometimes I make just half. Great Recipe!

This is a very good recipe and as another writer said, the cookies are good enough without the icing!

I did make the icing and it is delicious but I found 5 tablespoons of milk to be a little much and made the icing a little thinner than desired so I added a touch more sugar and thickened it to the consistency I wanted.

Someone else asked if regular shortening would work...that is what I used and the cookies are yummy!

My absolute favorite thing about this recipe is if you exclude the icing, it is dairy free which means my dairy allergy daughter can enjoy it as well. I considered making the icing with soy but since this was my first run I went with the milk.

Very good!!! Did them just as the recipe called for. My only complaint is I ran out of frosting! :) (Must have put too much on some of them.) Also did some with grape jelly as some suggested and my husband loved them! I'm sure it would be just as good if you used regular shortning. I have done that in some recipes before and it turned out just as well.

Ok, I'm personally not a big peanut butter fan, but these are delicious! The cookie alone is very tasty, but you add the filling and shazam! I made this w/ crunchy peanut butter and added extra chopped peanuts because we like the consistency much better. Trust me, these are GREAT!

First, these are exellent. Can't go wrong with peanut butter in my book.

Second, in reference to the person from Austrailia, it is vegetable shortening, such as Crisco, that is butter flavored.

Very good! Everybody loved them. I added a thin layer of grape jam (you could use your favorite) along with the peanut butter filling and that was excellent also.
