This recipe lacks fat....no wonder they are dry! Instead, do the following: Using a stand mixer, add 1/2 cup (1 stick) softened butter and blend. Add 3/4 cup brown sugar and 1/2 cup granulated sugar. Mix with butter until smooth. Crack two 2 eggs, and add to butter and sugars until incorporated. Add 1 tsp. vanilla extract. Next add 1 1/2 cups AP flour, 1 tsp baking soda, 1 tsp ground cinnamon, 1/2 tsp salt, and 1 tsp. baking soda. Blend until incorporated. Add 3 cups oatmeal (quick or old-fashioned) and blend until smooth. Add 1/2 cup peanut butter and blend until smooth. Scoop by spoonfuls onto baking sheet and bake at 350 degrees for 14-16 minutes until bottoms of cookies begin to brown. Remove to cooling sheets.

This was a very quick, easy recipe to make with my kids. We used a teaspoon, rolled them into balls, and then made a thumbprint in them and added enough jam to fill the thumbprint before baking! I thought the jam might get runny in the heat of the oven, but it held up perfectly! We used Boysenberry Jam, but any flavor jam would work. I would definitely use jam rather than jelly though. Not quite sure how the jelly would hold up. These were amazing with the jam. Perfect snack or dessert. Even my husband loved them:)

Mine were not dry at all. I followed the suggestions of other and added the 1/2 teaspoon salt and vanilla and a few choc chips. They were so moist they were falling apart. I will say it didn't make many so they won't last long.

Looking for a quick easy recipe..this is it. A few people commented on dryness so I added a couple table spoons of water and mine didn't seem dry at all. I also added chocolate chips and a little salt. Yum!

Good quick and easy recipie. I was a little scared they would be dry with so few ingredients, so I added about 2 tablespoons butter, a half teaspoon salt, and half teaspoon vanilla for more flavor. I also wanted a lil chocolate, so I cut up about 20 peanut M&Ms and added those as well....and, the cookies turned out great! Will definately save this recipe and make again!

i substituted splenda brown sugar...i got 24 cookies....the batter is really thick....you need a drink when you eat these cookies, as they are pretty dry...baked for 6 min...

I was looking for an easy Peanut Butter Oatmeal recipe, and this is it! I was thinking I would have to find a gluten free one or adapt one, but with this one I don't! I just use gluten free oats instead of regular. My family loved them. I love the taste and that they are not super sweet. I might try adding salt and vanilla next time, just to see if it will taste good. Adding chocolate chips or a Hershey kiss would be a great addition. Thanks for a great quick and easy recipe.

My family loved them. I'm allergic to wheat, so the fact that they had no flour appealed to me. The recipe does make a small amount, but in my case that's a good thing, because I couldn't leave them alone! I did add a pinch or two of salt

These are such a quick and tasty cookie. I always have the ingredients in my pantry and so they're perfect when I need to whip something up fast or just need a cookie fix. I added some chocolate chips I had, but I could certainly see adding other flavors of chips, nuts or dried fruits to change it up. I will be adding this to my list of regulars.
