Peanut Butter Oatmeal Cookies Recipe
  • Prep/Total Time: 20 min.

Ingredients

  • 1/2 cup chunky peanut butter
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1-1/4 cups quick-cooking oats
  • 1/2 teaspoon baking soda

Directions

  • In a small bowl, cream peanut butter and brown sugar until fluffy. Beat in egg. Add oats and baking soda to creamed mixture; mix well.
  • Drop by tablespoonfuls 2 in. apart onto greased baking sheets; flatten slightly. Bake at 350° for 6-8 minutes. Remove to wire racks to cool. Store in an airtight container. Yield: 2 dozen.

Nutritional Facts 1 cookie equals 67 calories, 3 g fat (1 g saturated fat), 9 mg cholesterol, 57 mg sodium, 8 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1/2 starch, 1/2 fat.

Just made these with modifications and they are awesome! Instead of 1/2 cup brown sugar, used 3T brown sugar and 3T honey. Made 8 large cookies and cooked for 10 minutes. Delicious and nutritious!

The recipe sounds good but the other reviews say they added butter, chips and vanilla.

How much butter do you add and do you add it to the peanut butter and brown sugar?

Made a double batch to begin with and I think they turned out pretty amazing! I didn't see the add vanilla and chocolate chips and butter till after they were made.

Recipe needs the vanilla or they have a bland flavor. Would also use the 2 T. butter as suggested.

Added 1/2 tsp vanilla. Recipe didn't make as many cookies as stated. We really liked them, will double recipe next time. Healthy option to store bought very quick & easy.

I tried this and found too much oatmeal at the bottom of the bowl that would not mix in even after lots of stirring. Added 1/4 c. more peanut butter to clean it up and get a dough that would hold together. Baked them and let them cool before eating but they would not hold shape in my daughter's hand despite gentle handling. It was a complete pile of crumbs before it was half eaten. If a recipe is "great" but you need to add/do "this... and that... and that..." to make it turn out right, maybe it's time to search for a new recipe?

This is a great, quick recipe. I followed the advice of adding 2 tbsp butter/1/2 tsp salt/ 1/2 tsp vanilla/choc chips. It was a hit! Soooo easy to make!

With addition of oatmeal and soda, this is a different take on a classic wheat flour-free recipe from allergy cookbooks decades ago. Excellent for people with wheat allergies. My husband never loved it w/o all the butter, etc., but the kids and I always did. It's lower fat and wheat free.... And in every cookie and muffin recipe, I sprinkle in some ground flax seed for hidden dose of Omega-3.

This recipe lacks fat....no wonder they are dry! Instead, do the following: Using a stand mixer, add 1/2 cup (1 stick) softened butter and blend. Add 3/4 cup brown sugar and 1/2 cup granulated sugar. Mix with butter until smooth. Crack two 2 eggs, and add to butter and sugars until incorporated. Add 1 tsp. vanilla extract. Next add 1 1/2 cups AP flour, 1 tsp baking soda, 1 tsp ground cinnamon, 1/2 tsp salt, and 1 tsp. baking soda. Blend until incorporated. Add 3 cups oatmeal (quick or old-fashioned) and blend until smooth. Add 1/2 cup peanut butter and blend until smooth. Scoop by spoonfuls onto baking sheet and bake at 350 degrees for 14-16 minutes until bottoms of cookies begin to brown. Remove to cooling sheets.

This was a very quick, easy recipe to make with my kids. We used a teaspoon, rolled them into balls, and then made a thumbprint in them and added enough jam to fill the thumbprint before baking! I thought the jam might get runny in the heat of the oven, but it held up perfectly! We used Boysenberry Jam, but any flavor jam would work. I would definitely use jam rather than jelly though. Not quite sure how the jelly would hold up. These were amazing with the jam. Perfect snack or dessert. Even my husband loved them:)

Mine were not dry at all. I followed the suggestions of other and added the 1/2 teaspoon salt and vanilla and a few choc chips. They were so moist they were falling apart. I will say it didn't make many so they won't last long.

Looking for a quick easy recipe..this is it. A few people commented on dryness so I added a couple table spoons of water and mine didn't seem dry at all. I also added chocolate chips and a little salt. Yum!

Good quick and easy recipie. I was a little scared they would be dry with so few ingredients, so I added about 2 tablespoons butter, a half teaspoon salt, and half teaspoon vanilla for more flavor. I also wanted a lil chocolate, so I cut up about 20 peanut M&Ms and added those as well....and, the cookies turned out great! Will definately save this recipe and make again!

i substituted splenda brown sugar...i got 24 cookies....the batter is really thick....you need a drink when you eat these cookies, as they are pretty dry...baked for 6 min...

I was looking for an easy Peanut Butter Oatmeal recipe, and this is it! I was thinking I would have to find a gluten free one or adapt one, but with this one I don't! I just use gluten free oats instead of regular. My family loved them. I love the taste and that they are not super sweet. I might try adding salt and vanilla next time, just to see if it will taste good. Adding chocolate chips or a Hershey kiss would be a great addition. Thanks for a great quick and easy recipe.

My family loved them. I'm allergic to wheat, so the fact that they had no flour appealed to me. The recipe does make a small amount, but in my case that's a good thing, because I couldn't leave them alone! I did add a pinch or two of salt

These are such a quick and tasty cookie. I always have the ingredients in my pantry and so they're perfect when I need to whip something up fast or just need a cookie fix. I added some chocolate chips I had, but I could certainly see adding other flavors of chips, nuts or dried fruits to change it up. I will be adding this to my list of regulars.

These were dry, not very sweet, and had too much oatmeal, not enough cookie. I didn't mind them so much, because I LOVE oatmeal, but everyone else that tried them didn't care for them.

I love these cookies. First, because they are so simple and second because they taste great. I always double the recipe (they would be gone by the end of the day if I didn't) and I add mini-chocolate chips to the batter at the end.

I love the idea of adding raisins (that someone on here suggested) so I'm going to try that for the holidays.

These are sooo easy & absolutely delicious. I added a tsp of golden shortening a tad of oil as I couldn't get the sugar & peanut butter to cream properly. No biggie. I also added a bit of vanilla, raisins & chipits. Oh definitely a family keeper. Just took them out of the oven a few minutes ago. They're going fast. Thanks so much for this recipe. I never had cookies come together faster from idea to oven. I was actually browsing apple cookie recipes & spotted this, I was off & running as it looked just to easy. Glad I did!!!

Whenever I make oatmeal cookies, they either turn out too doughy or too hard and burnt, these cookies are not the case. I rolled the dough into small walnut size balls, flattened slightly and cooked for 9 min. Even though I doubled the recipe, it almost made 3 doz. No doubt these will go fast, made my first batch thursday and have asked to make more tonight. Thanks for sharing!

When cooked, mine tasted just like the raw batter did. ??? I was wondering if anyone else noticed this or if I should've cooked them longer? I loved how simple they were though. Next time I'm putting a Kiss on top of each one. :) Enjoy!

The batter was very thick and hard to mix. I used reduced fat peanut butter. Maybe that's why. They were good, anyway. I aslo added raisins to half the batch.

I made these this week and they were just great, i chose the recipe because of the low sodium, which my husband can have very little of and and so few ingredients. I will be making them again tomorrow for my Bunko ladies Tuesday.

I made these cookies for Christmas and everyone loved them. If you are a weight watcher they are only 1 pt ea. Very easy to make, you could even subsitute egg beaters for the egg and make it more healthy.
