Peanut Butter Granola Mini Bars Recipe
  • Prep: 20 min. Bake: 15 min. + cooling
  • Yield: 36 Servings

Ingredients

  • 1/2 cup reduced-fat creamy peanut butter
  • 1/3 cup honey
  • 1 egg
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 3-1/2 cups old-fashioned oats
  • 1/2 cup packed brown sugar
  • 3/4 teaspoon salt
  • 1/3 cup peanut butter chips
  • 1/3 cup miniature semisweet chocolate chips

Directions

  • In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended. Combine the oats, brown sugar and salt; add to the peanut butter mixture and mix well. Stir in chips. (Batter will be sticky.)
  • Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 12-15 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into bars. Yield: 3 dozen.

Nutritional Facts 1 piece equals 93 calories, 4 g fat (1 g saturated fat), 6 mg cholesterol, 76 mg sodium, 14 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchanges: 1 starch, 1 fat.

Very good and easy to make. Next time I may leave out peanut butter chips and I'll add some dried cranberries or dried cherries. I don't care for peanut butter, but these weren't overpowering in flavor. I'd make them again.

They tasted great! But they came out pretty crumbly. Will make again, trying a whole cup of peanut butter with no chips as others have suggested.

my recipe held together well: I used 2 tablespoons natural applesauce and 1 tablespoon oil instead of the specified oil. Also used reg peanut butter. deleted peanut butter chips - they are full of transfats. added more choc chips instead. really really good recipe.

They were very good but I think by using low-fat peanutbutter they did not hold together as well as expected,and for 93 calories they are really small if you follow the suggested amount on recipe,but I will make them again, my husband is diabetic and he like them as well.

We loved this recipe. I added 1/2 cup coconut, 1/4 C more chunky peanut butter and 1 cup mini chocolate chips instead of 1/3 cup. We will make this again. Next time I may add raisins instead of chocolate chips and I will melt my peanut butter chips and spread on top. When I cut them I will have the peanut butter chips side on the bottom.
