Peanut Butter Granola Mini Bars Recipe
  • Prep: 20 min. Bake: 15 min. + cooling
  • Yield: 36 Servings

Ingredients

  • 1/2 cup reduced-fat creamy peanut butter
  • 1/3 cup honey
  • 1 egg
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 3-1/2 cups old-fashioned oats
  • 1/2 cup packed brown sugar
  • 3/4 teaspoon salt
  • 1/3 cup peanut butter chips
  • 1/3 cup miniature semisweet chocolate chips

Directions

  • In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended. Combine the oats, brown sugar and salt; add to the peanut butter mixture and mix well. Stir in chips. (Batter will be sticky.)
  • Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 12-15 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into bars. Yield: 3 dozen.

Nutritional Facts 1 piece equals 93 calories, 4 g fat (1 g saturated fat), 6 mg cholesterol, 76 mg sodium, 14 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchanges: 1 starch, 1 fat.

Very good and easy to make. Next time I may leave out peanut butter chips and I'll add some dried cranberries or dried cherries. I don't care for peanut butter, but these weren't overpowering in flavor. I'd make them again.

They tasted great! But they came out pretty crumbly. Will make again, trying a whole cup of peanut butter with no chips as others have suggested.

my recipe held together well: I used 2 tablespoons natural applesauce and 1 tablespoon oil instead of the specified oil. Also used reg peanut butter. deleted peanut butter chips - they are full of transfats. added more choc chips instead. really really good recipe.

They were very good but I think by using low-fat peanutbutter they did not hold together as well as expected,and for 93 calories they are really small if you follow the suggested amount on recipe,but I will make them again, my husband is diabetic and he like them as well.

We loved this recipe. I added 1/2 cup coconut, 1/4 C more chunky peanut butter and 1 cup mini chocolate chips instead of 1/3 cup. We will make this again. Next time I may add raisins instead of chocolate chips and I will melt my peanut butter chips and spread on top. When I cut them I will have the peanut butter chips side on the bottom.

I would make this again but I would use regular peanut butter. These bars didn't hold together very well so I think they need something extra so they will keep their form.

I made exactly as written & they were great. I am not usually a graola bar fan because they are dry. These were not dry at all. I did make with all chocolate chips but will add mini M&Ms next time. Maybe nuts too.

I followed the receipe exactly. A little dry. I felt like they would have been better if I would have used milk chocolate chips instead of the semi-chocolate, a little bitter. Could the particular honey I used make the difference in taste ?

Keeper for sure...I used Nutella rather than Peanut Butter as suggested by Grammy Ruth below. Might try adding rice krispies or coconut next time.

Absolutely wonderful!!! I did use sugar free honey, quickoats(did not have any old-fashioned oats), splenda brown sugar and applesauce(in the place of canola oil).Everyone loved them!

Great! I made several substitutions according to my pantry! I substituted light Karo for the honey, butterscotch chips for the peanut butter chips and added 1/2 cup shredded coconut. It was easy and fast... a great "keeper"

This is a very good granola BAR to make..I exchanged: the peanut butter with Nutella, the canola oil with coconut oil, the 3 1/2 cups of oats for 3 cups of oats and 1/2 cup of wheat germ, the peanut butter chips for butter scotch chips, and added nuts and coconut. It is delicious, and firm enough to cut into granola sized bars to take as a snack for lunch. I pressed the mixture firmly in a dish greased with coconut oil and baked in the oven according to the directions. I can't wait to see what my Sunday School 2nd and 3rd graders think tomorrow. Possible allergies to peanut butter was avoided by the substitutions listed above.

Loved this recipe, I didn't use the peanut butter chips, instead I chopped up raisins and craisins mixed w/a little flour so they would not stick together. Next time I'll add some chopped apricots too. Love these !!!

Wow! I make these every week. My whole family loves them. It's a great Weight Watcher friendly recipe. My daughter is allergic to peanuts so I make a version using Nutella and milk chocolate and vanilla morsels instead of the peanut butter and peanut butter morsels...delicious.

These are so so good. I didn't have peanut butter chips or chocolate chips but did have some white chocolate chips. I added a cup of those and a big handful of walnuts and coconut. I baked as directed and then cut them in granola bar size and put them on a cookie sheet and baked them again so each one got a little brown, probably for another 15 minutes at 350. they are crunchy but still chewable. YUM!

I made a variation of Peanut Butter Granola Bars, so that I could cut down on the sugar and use more than one type of grain. I also omitted both flavors of chips.

In place of the 2/3 cup of chips and 1/3 cup of oats, I used 1 cup of dry crushed, crispy cereal.

In place of 1/2 cup of oats, I threw in 1/2 cup of Harvest Grains Blend, a King Arthur product containing 8 different seeds and grains.

In case you've lost track; that leaves a total of 2 2/3 cups of oats to be used in the bars

I forgot to add that asking with freshly ground unsalted peanut butter, I used 1/2 c. raisins instead of the chips! Still delicious! Will definitely be making these again!

I have made this twice now and just love it! The first time I mixed everything by hand and it was great, chunky, really good with ice cream. The second time I used a mixer....won't do that again, it made it all chopped up. I prefer to have the oats in one piece not chopped up. Great recipe though, I would recommend it to anyone!

I made these bars and they were absolutely yummy! I eyeballed the peanut butter by guessing what I thought a half cup was - I am sure I was over - but they were delicious regardless. I did add mini chocolate chips and a few handfuls of dried fruit - Very good. Next time I might add coconut and nuts. It is a great "everything but the kitchen sink" recipe! Thank you for sharing!

We have made a variation of this recipe four times in one week! The first time we went directly be the recipe. If you like a lot of peanut butter you will like the recipe as it is. My family preferred to reduce the peanut butter, we have made it with half of the peanut butter chips and without them... Either way it is delicious!! I also add about 1/4 c. of wheat germ. This is a great morning breakfast on the go, mid-afternoon or evening snack! This recipe will stay in my collection for a long, long time!!!

Followed directions except for the 1/3 cup peanut butter chips. I used a generous 1/2 cup peanut butter, and added about 1/2 cup total of almonds and peanuts instead of the 1/3 cup peanut butter chips. Turned out great! Will definitately make again!

These were very good. My kids liked these very much. My sister (someone who does not like baking at all) like them too and said she wanted to make them because they are easy. I didn't have peanut butter chips so I used the mini semi sweet chips. I also forgot to use the canola oil but it didn't make any difference. Why add the extra fat? I would make these again.

These are excellent! I didn't have the reduced fat peanut butter so the calorie count was higher...and I cut them into 32 pieces instead of 36. It was worth it - so delicious!

We have made several batches already of these granola bars. They are fabulous! As another review wrote, I would rather make my own granola bars than purchase them filled with preservatives and unknown ingredients.

Really tasty! This is a great base for any combination of favorite chips, (I used butterscotch/dk choc)and other possible add ins; dried fruit (cranberries, cherries, blueberries etc.), nuts, and coconut. Also I used crunchy peanut butter.

I was tickled pink everything needed was right in my cupboards/frig. I love when that happens. No extra trip to the store.

This recipe sounds good but is DEFINITELY NOT diabetic friendly and can mislead uninformed diabetics. Mixing honey, brown sugar and two kinds of sweet chips could raise blood sugars to a dangerous leve. Please correct this so no one gets hurt.

These bars are delicious! I had to add about 3/4 cup of quick cooking oats as I didn't have quite enough of the old fashioned oats and it didn't hurt them a bit. I'm sending this batch to work with myt husband to share.
