Peanut Butter Easter Eggs Recipe
  • Prep: 35 min. + chilling
  • Yield: 16 Servings

Ingredients

  • 1/2 cup butter, softened
  • 2-1/3 cups confectioners' sugar
  • 1 cup graham cracker crumbs
  • 1/2 cup creamy peanut butter
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups dark chocolate chips
  • 2 tablespoons shortening
  • Pastel sprinkles

Directions

  • In a large bowl, cream butter; gradually add the confectioners' sugar, cracker crumbs, peanut butter and vanilla. Shape into 16 eggs; place on waxed paper-lined baking sheets. Refrigerate for 30 minutes or until firm.
  • In a microwave, melt chocolate chips and shortening; stir until smooth. Dip eggs in chocolate; allow excess to drip off. Decorate with sprinkles; return eggs to waxed paper. Chill until set. Store in an airtight container in the refrigerator. Yield: 16 eggs.

Did everything right for a delicious result except didn't let chocolate dry on wax paper. Kept it on cookie rack and placed in refrigerator; consequently, they stuck! But overall very, very good. Will make again!

My Grandmother gave me peanut butter eggs every Easter when I was growing up. I have been searching for a recipe so I can make them for my kids and carry on the tradition. To make it extra special, I looked online and found a company, Box and Wrap that has the cutest Easter candy boxes and candy bags. I chose the bunny shaped candy box.

I made these for Easter. They are delicious. I will make them again as peanut butter balls instead of eggs. I think that bite size would be better. The chocolate gets very soft if left out of the fridge. Less shortening would probably make the chocolate stay more firm.

This was really easy to make and I found that the easyest way to make the egg shape was to use a ice cream scooper, which made the perfect size and I was able to get 16 eggs out of it. Very cute for an Easter snack..!!!

This dessert is WONDERFUL and I always make excuses to make it year round! I make peanut butter balls and decorate them with appropriate colored sprinkles for Thanksgiving and Christmas, and they are ALWAYS a huge hit!

Great recipe! For kmandres, Nabisco makes packaged graham cracker crumbs, probably other brands as well. Check out the baking supplies aisle at your supermarket!

These were wonderful!! My 7 year old daughter did most of this, they are that easy. We live in the country and we did not happen to have regular graham crackers and substiuted chocolate graham crackers and they were good too!!

Wow are these delicious! I make a similiar recipe for peanut butter buckeyes and for Halloween peanut butter eyeballs, but the graham crackers make these unique! Do your self a favor though and use chocolate flavored bark instead of the chocolate chips and shortening to dip the eggs in. It is much easier and taste just as good.
