Peanut Butter Brownies Recipe

Ingredients

  • 3/4 cup shortening
  • 3/4 cup peanut butter
  • 2-1/4 cups sugar
  • 5 eggs
  • 1-1/2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1-1/2 cups semisweet chocolate chips
  • 3/4 cup chopped peanuts

Directions

  • In a large bowl, cream the shortening, peanut butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder and salt; beat into creamed mixture just until blended. Stir in the chocolate chips and peanuts.
  • Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 30 minutes or until golden brown. Yield: about 3 dozen.

Editor's Note: Reduced-fat peanut butter is not recommended for this recipe.

Concerned about the amount of eggs. Can you substitute egg whites for some of the eggs??

I love these brownies they are easy and always get eaten up. They are moist and chewy and light.
