Peanut Butter Bread

1-1/2 cups all-purpose flour
1 cup quick-cooking oats
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup chunky peanut butter
1 egg
1 cup milk
1 teaspoon vanilla extract

In a bowl, combine the flour, oats, sugar, baking powder and salt. Cut in the
peanut butter until crumbly. Combine the egg, milk and vanilla; stir into dry
ingredients just until moistened. Transfer to a greased 9-in. x 5-in. loaf pan.
Bake at 350° for 55-60 minutes or until a toothpick inserted near the center
comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Yield: 1 loaf.
