Peanut Butter Bread

"Years ago, when our children were growing up, I made this bread quite often," remarks Nola Laughery of Connellsville, Pennsylvania. "They loved eating warm slices spread with butter."

TIME: Prep: 15 min. Bake: 55 min. + cooling

Ingredients:

  • 1-1/2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup chunky peanut butter
  • 1 egg
  • 1 cup milk
  • 1 teaspoon vanilla extract

Directions:

In a bowl, combine the flour, oats, sugar, baking powder and salt. Cut in the peanut butter until crumbly. Combine the egg, milk and vanilla; stir into dry ingredients just until moistened.
    Transfer to a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf.
