Peachy Turkey Meatballs
"These moist meatballs are so easy to make, and I don't have to worry about heating up my kitchen for dinner," says Brenda Thompson of Sugar Land, Texas.

Ingredients
1 egg
1/4 cup dry bread crumbs
1/4 cup sliced green onions
1/4 teaspoon salt
1/4 teaspoon ground ginger
1 pound ground turkey
GINGER-PEACH SAUCE:
1/4 cup peach preserves
2 teaspoons golden raisins
2 tablespoons soy sauce
2 tablespoons ketchup
1/2 teaspoon ground ginger
Hot cooked rice
Directions
In a bowl, combine the first five ingredients. Crumble turkey over
mixture and mix well; shape into 1-1/2-in. balls. Place in an 8-in.
square microwave-safe dish.
In a bowl, combine the preserves, raisins, soy sauce, ketchup and
ginger until blended. Pour over meatballs. Cover and microwave on
high for 6-8 minutes or until meat is no longer pink. Serve over
rice. Yield: 4 servings.
