Ingredients:

  • 1 egg
  • 1/4 cup dry bread crumbs
  • 1/4 cup sliced green onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1 pound ground turkey
  • GINGER-PEACH SAUCE:
  • 1/4 cup peach preserves
  • 2 teaspoons golden raisins
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • 1/2 teaspoon ground ginger
  • Hot cooked rice

Directions:

In a bowl, combine the first five ingredients. Crumble turkey over mixture and mix well; shape into 1-1/2-in. balls. Place in an 8-in. square microwave-safe dish.
    In a bowl, combine the preserves, raisins, soy sauce, ketchup and ginger until blended. Pour over meatballs. Cover and microwave on high for 6-8 minutes or until meat is no longer pink. Serve over rice. Yield: 4 servings.
