Peaches & Cream French Toast Recipe

Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup butter, cubed
  • 2 tablespoons corn syrup
  • 1 can (29 ounces) sliced peaches, drained
  • 1 loaf (1 pound) day-old French bread, cubed
  • 1 package (8 ounces) cream cheese, cubed
  • 12 eggs
  • 1-1/2 cups half-and-half cream
  • 1 teaspoon vanilla extract

Directions

  • In a small saucepan, combine the brown sugar, butter and corn syrup. Cook and stir over medium heat until sugar is dissolved; pour into a greased 13-in. x 9-in. baking dish.
  • Arrange peaches in dish. Place half of the bread cubes over peaches. Layer with cream cheese and remaining bread. Place the eggs, cream and vanilla in a blender; cover and process until smooth. Pour over top. Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted near the center comes out clean. Yield: 12 servings.

I made this a few days ago and it was a big hit! I will probably uses smaller pieces of cream cheese next time or melt it and drizzle over the top. Also, I baked it a bit longer to really crisp up the bread. BIG HIT! Definitely share with friends and family!

This was great...make sure you whip the eggs in the blender as per the instructions, so ALL of the bread gets soaked in egg.

The bread & eggs were soggy & slimy. My 14 mo old wouldn't even eat more than 1 bite. If i did make it again, I would definately blend up the cream cheese too cause it was still cubed after I cooked it. Too much time, too much peaches & eggs & too bad to make again. Sorry!

Meh. Followed recipe exactly, and added some cinnamon since it's Christmas time. Wasn't too thrilled with it. It was alright, but nothing that I would want to make again. Maybe sprinkling some brown sugar and cinnamon on the top would help? Or maybe if the peaches and sauce were better mixed in with the bread crumbs (or maybe it was too much bread for my taste)?
