Pasta Fagioli Soup Recipe

Ingredients

  • 1/2 pound Italian turkey sausage links, casings removed, crumbled
  • 1 small onion, chopped
  • 1-1/2 teaspoons canola oil
  • 1 garlic clove, minced
  • 2 cups water
  • 1 can (15-1/2 ounces) great northern beans, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (14-1/2 ounces) reduced-sodium chicken broth
  • 3/4 cup uncooked elbow macaroni
  • 1/4 teaspoon pepper
  • 1 cup fresh spinach leaves, cut into strips
  • 5 teaspoons shredded Parmesan cheese

Directions

  • In a large saucepan, cook sausage over medium heat until no longer pink; drain and set aside. In the same pan, saute onion in oil until tender. Add garlic; saute 1 minute longer.
  • Add the water, beans, tomatoes, broth, macaroni and pepper; bring to a boil. Cook, uncovered, for 8-10 minutes or until macaroni is tender.
  • Reduce heat to low; stir in sausage and spinach. Cook for 2-3 minutes or until spinach is wilted. Garnish with cheese. Yield: 5 servings.

Nutritional Facts 1-1/3 cups equals 228 calories, 7 g fat (1 g saturated fat), 29 mg cholesterol, 841 mg sodium, 27 g carbohydrate, 6 g fiber, 16 g protein. Diabetic Exchanges: 1-1/2 starch, 1 lean meat, 1 vegetable, 1/2 fat.

I make this all the time for my family and they just love it. I make it mine by using more water for an entire box of ditalini pasta, cannelini beans for a more authentic italian flare and chicken sausage to make it healthier.

I absolutely loved this recipe! I used cavatappi pasta in place of elbow, and all water with three reduced sodium chicken bouillon cubes, as the cooking liquid. Cannot wait to make this again!

This is a delicious soup! I used 2 cloves of garlic and hot italian sausage. I also served it with a garlic & parmesan baguette. I think the next time I make it, which will be soon, I'll try some of the suggestions in the other reviews. I love having Taste of Home as a resource for recipes!

I make this all the time.We love it. I use chicken broth instead of water. I also use ditalini instead of elbow mac. We love tastes great the next day.

I will be making this recipe again very soon. The only changes I made was adding 3 cloves of garlic and using hot Italian turkey sausage links. Excellent recipe. My husband really liked it. It was great for lunch heated in the microwave the next day. Delicious.

This basic recipe is Yummy, I use 3 cloves of garlic, 32oz. container of fat free, low sodium chicken stock,no water and 1/2 cup of ditalini. I also saute the sausage,drain off the excess fat and then add the onion and garlic and saute that along with the sausage. I then add the rest of the ingredients and simmer together with an additional can of beans. Because of my changes I give this 4 stars and have made it several times. It is delicious.
