Party Tortellini Salad Recipe

Ingredients

  • 1 package (19 ounces) frozen cheese tortellini
  • 2 cups fresh broccoli florets
  • 1 medium sweet red pepper, chopped
  • 1/2 cup pimiento-stuffed olives, halved
  • 3/4 cup reduced-fat red wine vinaigrette
  • 1/2 teaspoon salt

Directions

  • Cook tortellini according to package directions; drain and rinse in cold water.
  • In a large bowl, combine the tortellini, broccoli, red pepper and olives. Drizzle with dressing and sprinkle with salt; toss to coat. Cover and refrigerate until serving. Yield: 10 servings.

Nutritional Facts 3/4 cup equals 156 calories, 7 g fat (2 g saturated fat), 8 mg cholesterol, 596 mg sodium, 19 g carbohydrate, 1 g fiber, 6 g protein. Diabetic Exchanges: 1 starch, 1 lean meat, 1/2 fat.

My family loves brocolli, especially my five year old grandaughter. . . she says it's her favorite food. Can't wait to try this! Sound great and looks beautiful.

I don't understand why someone who hates broccoli would even bother to look at a recipe in which one of the main ingredients is broccoli!!! Go figure. If anyone can't find tortellini in their store (and I really can't understand why since it is in a lot of salad recipes) maybe mini ravioli would work in its place. I love the idea of using cheese cubes and turkey pepperoni in this. It would make it almost taste like antipasto salad. Yummy either way. I live in PA and can find tortellini in even the smallest stores, so I don't think it's a regional thing. It does come dried, fresh, or frozen in most every store. Hope you find it.

We loved this salad! Thank you for posting the recipe. Broccoli is the favorite vegetable in our family of five, and these flavors blended beautifully.

What an amazingly ridiculous, childish and inappropriate comment by phyllisturner. A few words of advice ... if you see broccoli in a recipe, click off that recipe immediately and look elsewhere. Sheesh, it's not rocket science; it's a recipe that others (like my family) may enjoy.

I couldn't find red wine vinaigrette so I used Raspberry. The salad was out of this world. Definitely a keeper

Hi Velohic - the only time I see tri-color tortellini is in the dry pasta section, not frozen. It's decent quality if you follow the package directions. Hope that helps.

Way to go Velochic!!! I dont understand why SOME people feel the need to be so negative in their comments on this web site.I think this salad sounds wonderful just the way it is, and I plan to prepare it this weekend for my daughters baby shower. Thanks for posting this recipe!

Broccoli is DISGUSTING! I use marinated mushrooms, black olives, roasted red peppers, italian dressing, and NO SALT in mine and it is fantastic! Not everyone likes broccoli; my family wouldn't eat this!

 

 

Wow, that's really judgmental!  Because YOUR family doesn't like broccoli, it's DISGUSTING?  With attitudes like that, no wonder so many kids are picky!

 Anyway, I think the thread has some great ideas.  I was wondering if anyone knows where to buy TRICOLOR tortellini (white, spinach, and tomato pasta doughs).  I have seen it before, but have not been able to find it for a couple of years.  I'm in the Midwest.
