Parmesan Chicken Couscous Recipe

Ingredients

  • 1/2 cup chopped walnuts
  • 2 teaspoons olive oil, divided
  • 3 garlic cloves, minced
  • 2 cups chopped fresh spinach
  • 1-1/2 cups cubed cooked chicken
  • 1-1/4 cups water
  • 2 teaspoons dried basil
  • 1/4 teaspoon pepper
  • 1 package (5.9 ounces) Parmesan couscous
  • 1/4 cup grated Parmesan cheese

Directions

  • In a large saucepan, cook walnuts over medium heat in 1 teaspoon oil for 2-3 minutes or until toasted. Remove and set aside.
  • In the same pan, saute garlic in remaining oil for 1 minute. Add the spinach, chicken, water, basil and pepper. Bring to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5-10 minutes or until water is absorbed. Fluff with a fork. Stir in walnuts and sprinkle with cheese. Yield: 4 servings.

Nutritional Facts 1 cup equals 391 calories, 18 g fat (3 g saturated fat), 51 mg cholesterol, 490 mg sodium, 34 g carbohydrate, 3 g fiber, 25 g protein. Diabetic Exchanges: 3 lean meat, 2 starch, 2 fat.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

any suggestions if I want to substitute regular couscous to avoid sodium? what's in the packaged parmesan couscous that I could add in

I used chicken stock in place of water and put the chicken in raw. It was thinly cut so cooked though following the above steps.. Great easy dinner

Just made this last night and it was very easy to make. Only thing I omitted was the walnuts (due to nut allergy) but entire family loved it. They gave it 4 1/2 and 5 stars. Will make again!!
