Paddy's Reuben Dip Recipe

Ingredients

  • 4 packages (2 ounces each) thinly sliced deli corned beef, finely chopped
  • 1 package (8 ounces) cream cheese, cubed
  • 1 can (8 ounces) sauerkraut, rinsed and drained
  • 1 cup (8 ounces) sour cream
  • 1 cup (4 ounces) shredded Swiss cheese
  • Rye bread or crackers

Directions

  • In a 1-1/2-qt. slow cooker, combine the first five ingredients. Cover and cook on low for 2 hours or until cheese is melted; stir until blended. Serve warm with bread or crackers. Yield: about 4 cups.

5 stars plus, this recipes is awesome...I served it with crackers, little breads and thousand island dressing depending on how ppl wanted to eat it...it was a huge hit!!

Took this camping as my "Happy Hour" treat and everyone loved it!! My crock pot came back empty! I would make this again!

If you love Reubens you'll love this! Served with mini rye bread slices and it was the hit of the party!

There are so many variations of this recipe. I used 9 ounces of corned beef, light cream cheese, 10-ounce can of sauerkraut, 1/2 C light sour cream/1/2 C Thousand Island dressing and 8 ounces of swiss cheese. I served this dip with whole wheat pita chips and it was GREAT!
