Oven Barbecued Chicken

Chicken and Sunday dinner go together in my mind. During my 20 years of married life on a dairy farm, I'd often brown the chicken and mix up the sauce while my husband milked, then pop it in the oven when we left for church. —Esther Shank, Harrisonburg, Virginia

INGREDIENTS

  • Vegetable oil
  • 1 broiler/fryer chicken, cut up (3 to 4 pounds)
  • 1/3 cup chopped onion
  • 3 tablespoons butter
  • 3/4 cup ketchup
  • 1/2 cup hot water
  • 1/3 cup cider vinegar
  • 3 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons prepared mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

DIRECTIONS

Heat a small amount of oil in a large skillet; brown chicken in batches. Drain chicken on paper towels.
    Meanwhile, in a small saucepan, saute onion in butter until tender; stir in the remaining ingredients. Simmer, uncovered, for 15 minutes.
    Place chicken in an ungreased 13-in. x 9-in. baking dish. Pour barbecue sauce over chicken. Bake, uncovered, at 350° for 45-60 minutes or until chicken juices run clear, basting occasionally. Yield: 6-8 servings.
