Orange Pear Crisp Recipe

Ingredients

  • 4 medium ripe pears, peeled and sliced
  • 1/4 cup all-purpose flour
  • Sugar substitute equivalent to 1/4 cup sugar
  • 1/4 cup orange juice
  • 2 teaspoons grated orange peel
  • TOPPING:
  • 3 whole reduced-fat graham crackers, crushed
  • Sugar substitute equivalent to 1/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 3 tablespoons reduced-fat butter, melted

Directions

  • In a large bowl, combine the pears, flour, sugar substitute, orange juice and orange peel. Spoon into an 8-in. square dish coated with cooking spray.
  • In a small bowl, combine the graham cracker crumbs, sugar substitute, flour and cinnamon; stir in butter. Sprinkle over pear mixture. Bake at 350° for 20-25 minutes or until topping is crisp and lightly browned. Serve warm. Yield: 6 servings.

    Editor's Note: THis recipe was tested with Splenda No Calorie Sweetener and Land O'Lakes light stick butter.

Nutritional Analysis: 2/3 cup equals 163 calories, 4 g fat (2 g saturated fat), 10 mg cholesterol, 85 mg sodium, 32 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1 starch, 1 fruit, 1/2 fat.
