Orange Fruit Cups Recipe

Ingredients

  • 2 medium navel oranges, halved
  • 1 small apple, chopped
  • 1 small banana, sliced
  • 1/4 cup plain yogurt
  • 1/4 teaspoon ground cinnamon
  • Additional ground cinnamon, optional

Directions

  • Using a paring or grapefruit knife and spoon, scoop out pulp from oranges, leaving a shell. Separate orange sections and chop; transfer to a small bowl.
  • Add the apple, banana, yogurt and cinnamon. Fill orange shells with fruit mixture. Sprinkle with additional cinnamon if desired. Serve immediately. Yield: 4 servings.

Nutritional Facts 1/2 cup fruit equals 80 calories, 1 g fat (trace saturated fat), 2 mg cholesterol, 8 mg sodium, 19 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchange: 1 fruit.

Tip

Banana Basics

Look for plump bananas that are evenly yellow-colored. Green bananas are under-ripe, while a flecking of brown flecks indicates ripeness. If bananas are too green, place in a paper bag until ripe. Adding an apple to the bag will speed the process. Store ripe bananas at room temperature. To prevent bruises, a banana hook or hanger is a great inexpensive investment. For longer storage, you can place ripe bananas in a tightly sealed plastic bag and refrigerate. The peel will become brown but the flesh will remain unchanged. One pound of bananas equals about 3 medium or 1-1/3 cups mashed.
