Orange Banana Tapioca

Ingredients
- 1-1/2 cups water
- 1 can (6 ounces) frozen orange juice concentrate, thawed
- 1/4 cup quick-cooking tapioca
- 3 tablespoons sugar
- Dash salt
- 1 can (11 ounces) mandarin oranges, drained
- 1 medium banana, sliced
Directions
- In a large saucepan, combine the water, orange juice concentrate,
- tapioca, sugar and salt; mix well. Let stand for 15 minutes. Bring
- to a boil; cook and stir until thickened.
- Fold in the oranges. Pour into serving dishes. Cover and refrigerate
- for 1 hour or until set. Garnish with banana slices. Yield: 3
- servings.
