Oatmeal Shortbread Recipe
  • Prep: 10 min. Bake: 30 min. + cooling
  • Yield: 30 Servings

Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1-1/2 cups all-purpose flour
  • 1-1/2 cups quick-cooking oats
  • 3/4 teaspoon salt

Directions

  • In a bowl, cream butter and sugar until light and fluffy. Gradually add the flour, oats and salt. Press into a greased 13-in. x 9-in. baking pan. Prick with a fork if desired. Bake at 325° for 30-35 minutes or until lightly browned. Cool for 10 minutes before cutting. Yield: about 5 dozen.

I have made this recipe many times over the last 7 years and it is a family favorite. Even a favorite for my husband who does not care much for sweets! It is easy to make at a moments notice if someone is dropping by. And it is so good while it is still warm and just as good the next day with a cup of coffee!
