I was given this recipe by a friend many years ago, and these cookies are as delicious as Mom used to make. The secret to this recipe is to measure exactly (no guessing on the amounts) and to not overbake.

Oatmeal Raisin Cookies Recipe

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 cup raisins
  • 1 cup coarsely chopped pecans, optional

Directions

  • In a large bowl, cream the shortening and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, salt and cinnamon. Add to creamed mixture, just until combined. Stir in the oats, raisins and pecans if desired.
  • Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten with a greased glass bottom.
  • Bake at 350° for 10-11 minutes or until golden brown. Do not overbake. Remove to a wire rack to cool. Yield: about 3-1/2 dozen.

Nutritional Facts 2 cookies equals 275 calories, 11 g fat (3 g saturated fat), 30 mg cholesterol, 247 mg sodium, 42 g carbohydrate, 1 g fiber, 4 g protein.

These were delicious!! The cookies turned out perfectly! The only change was to omit the nuts for my picky husband. Yum! I'm making more of these for Christmas gifts.

This is the second time for making these cookies because of all the raves. I did change the first batch though with 1/2 sugar rather than the cup. Tasted great!!!

Baking these right now. Baked them for 14 min.on insulated cookie sheets. Soft in center, crispy on edges. Perfect!

I have never made oatmeal raisin cookies before, but wanted to make some for a friend (they are his favorite). He said they were delicious, so I'll take his word for it! I think they are yummy too - maybe a little sweet for oatmeal raisin...when I make them again I'll probably cut the sugar a bit. Definitely easy and very good - even after a few days!

These are the best oatmeal raisin cookies I have ever eaten! They are easy to make and delicious! The only problem I had is that I couldn't use a greased glass to flatten them I just used my hand and it worked great! Thank you this is a keeper!
