I was given this recipe by a friend many years ago, and these cookies are as delicious as Mom used to make. The secret to this recipe is to measure exactly (no guessing on the amounts) and to not overbake.

Oatmeal Raisin Cookies Recipe

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 cup raisins
  • 1 cup coarsely chopped pecans, optional

Directions

  • In a large bowl, cream the shortening and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, salt and cinnamon. Add to creamed mixture, just until combined. Stir in the oats, raisins and pecans if desired.
  • Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten with a greased glass bottom.
  • Bake at 350° for 10-11 minutes or until golden brown. Do not overbake. Remove to a wire rack to cool. Yield: about 3-1/2 dozen.

Nutritional Facts 2 cookies equals 275 calories, 11 g fat (3 g saturated fat), 30 mg cholesterol, 247 mg sodium, 42 g carbohydrate, 1 g fiber, 4 g protein.

Wonderfully crispy/chewy right out of the oven. I doubled the recipe and froze half, these were crispy and still delicious after thawing out. A new favorite!

Oatmeal raisin cookies are normally not my favorite, but I felt like baking and had all the ingredients in the house I needed for these. Plainly stated - these are amazing! Not sure if it's that you use shortening instead of butter, but they are soft and moist, and taste great. They keep extremely well and I will definitely be making them again!

this was a very nice recipe, only problem i had was it was a bit too sweet for our liking so next time i will cut the sugars to half cup each.

This was fun and tasteful! The melt-your-mouth and oh-so crispy soft, chewy made this popular. I varied the nuts to almond slices and changed the regular oats to porridge oats. This was tasty and versatile! I baked them for staff in the office and they were all gone!

This is a great recipe! Even people who don't like oatmeal raisin cookies couldn't keep their hands off! I am going to make another batch this weekend and substitute chocolate chips for the raisins.

I used craisins instead of raisins (personal preference) and added 1/8 tsp of allspice. Yum!

ive used this recipe many times before...and always loved it!.just got a pkge of cinamon chips and im going to try them in this recipe today. wish me luck!!
