Oatmeal Dinner Rolls Recipe
  • Prep: 40 min. + rising Bake: 20 min.

Ingredients

  • 2 cups water
  • 1 cup quick-cooking oats
  • 3 tablespoons butter
  • 1 package (1/4 ounce) active dry yeast
  • 1/3 cup warm water (110° to 115°)
  • 1/3 cup packed brown sugar
  • 1 tablespoon sugar
  • 1-1/2 teaspoons salt
  • 4-3/4 to 5-1/4 cups all-purpose flour

Directions

  • In a large saucepan, bring water to a boil; add oats and butter. Cook and stir for 1 minute. Remove from the heat; cool to lukewarm.
  • In a large bowl, dissolve yeast in warm water. Add the oat mixture, sugars, salt and 4 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough.
  • Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
  • Punch dough down; allow to rest for 10 minutes. Shape into 18 balls. Place in two greased 9-in. round baking pans. Cover and let rise until doubled, about 45 minutes.
  • Bake at 350° for 20-25 minutes or until golden brown. Remove from pan to wire racks. Yield: 1-1/2 dozen.

Nutritional Analysis: One roll (prepared with margarine) equals 180 calories, 2 g fat (0 saturated fat), 0 cholesterol, 212 mg sodium, 34 g carbohydrate, 0 fiber, 4 g protein. Diabetic Exchanges: 2 starch, 1/2 fat.

I have never rated anything before, but these rolls are so fantastic they deserve a comment. First let me say, I've never had too much success with making bread although I do try! I LOVE yeast rolls and have never found a recipe that works for me, UNTIL NOW. Mine turned out just as they appear in the picture and were simply scrumptious, even better than resturant quality. To add to my surprise, and further complement this recipe, my yeast was expired and I had to use half white and half wheat flour yet they turned out beautifully! My family has not stopped commenting on them! I don't want to mess up a great thing, but I think I may try making them "bite size" next time as h'orderves. I served them with homemade honey butter--what a delight! I will be making these for Christmas as well to go along with a honey ham. You will LOVE this recipe if you are a yeast roll lover. It's easy and you just can't go wrong!

These rolls are AWESOME! This was my first time making bread that required kneading and rising, and it was so simple and turned out GREAT! These will be my new staple for family dinners.

These are absolutely delicious! My husband's cousin made these for the family reunion and I raved about how good they were, not knowing she baked them. She made them for our wedding reception and even two years later, people remember them! :-)

Anytime I find a recipe with brown sugar in it I substitute the liquid with pureed fruit. On this recipe I pureed a can of peaches, juice and all, and measured 2 cups of it instead of 2 cups of water. Dough is a little stiffer but it works out ok.
