Oatmeal Cranberry Cookie Mix Recipe

Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1 cup old-fashioned oats
  • 1 cup chopped walnuts
  • 1/2 cup Shredded Wheat, crushed
  • 1/2 cup dried cranberries
  • ADDITIONAL INGREDIENTS:
  • 1/2 cup butter, softened
  • 1 egg
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Directions

  • In a small bowl, combine the flour, baking soda and salt. In a 1-qt. glass container, layer the flour mixture, sugar, brown sugar, oats, walnuts, cereal and cranberries. Cover and store in a cool dry place for up to 6 months. Yield: 1 batch (about 4 cups total).
  • To prepare cookies: In a large bowl, beat the butter, egg, water and vanilla until blended. Add cookie mix and mix well.
  • Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Cool for 1 minute before removing to wire racks to cool completely. Store in an airtight container. Yield: about 2-1/2 dozen.

Nutritional Facts 1 cookie equals 89 calories, 5 g fat (2 g saturated fat), 14 mg cholesterol, 51 mg sodium, 9 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 fat, 1/2 starch.

cookies taste great, so delicious! but i did change the recipe.I used margarine instead of butter which is all veggetable, i used prob. too much vanilla or something and didnt add any shreded wheat as i coudnt find it, so i added 1/2 cup oats, as a result the mix was too soft to handle. I added one cup flour and refrigeretad a little so i worked it by hand making flat and delicious cookies. This cookies are just perfect sweet and soft inside and everyone in the family loved them!

I needed door prizes for a meeting and remembered seeing this recipe. The cookies are excellent! The only change I made was decreasing the walnuts to 1/2 cup so all the ingredients would fit in my jars. Would also suggest rolling the dough into a ball with hands and then flattening slightly. The cookies stayed together better. Thanks for the recipe, and I will for sure be using it again!

Can anything be substituted for the shredded wheat? I can only find the frosted kind in my neighborhood.

I made this for my son's Preschool teachers last year. Within the week I was getting rave reviews on how good it was; wish I would've made a jar for myself!!

I added angel flake coconut to mine. They were delicious. I liked them so well I gave jars of the mix to several friends for Christmas . Joyce

Oh these are good! I used Smart Balance 50/50 butter blend in place of the butter, Splenda Blend in place of the sugar and Egg Beaters in place of the eggs. The mix will make some very festive Christmas gifts.
