Oatmeal Breakfast Bars Recipe

Ingredients

  • 4 cups quick-cooking oats
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 1-1/2 cups chopped walnuts
  • 1 cup flaked coconut
  • 3/4 cup butter, melted
  • 3/4 cup orange marmalade

Directions

  • In a large bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients. Press into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 425° for 15-17 minutes or until golden brown. Cool on a wire rack. Yield: about 2-1/2 dozen.

These are beyond quick and simple to make! My boys all love these and have even mad!e these by themselves!....I have 6 boys, that should say it all about these bars, lol...

I added 1/2 cup wheat germ and reduced the coconut by 1/2 cup. I also added a 1/4 cup milk, and used some apricot preserves I had. I used brown sugar Splenda instead of brown sugar. Next time I will use a smaller pan and layered the batter, then the jam, then the batter again. Good breakfast.

I make this recipe often - can add sunflower seeds, wheat germ, dried cranberries, etc. to add nutritional value. Tried different flavor marmalades and jams - orange marmalade was by far the best and many jams didn't really work. Watch the baking time close - they get crispy fast. The crumbles are great for yogurt toppers (think McDonald's yogurt parfaits).

Yummy flavor, but they did fall apart. Kids didn't care for the marmalade, but the adults love it!

The flavors were not what my family cared for, but after making them I found that they could easily be tweaked to make them to suit our families tastes. Perhaps a different flavor of jam or adding peanut butter. I also reduced the sugar. On the up side, they were very simple to make. Will make again with a few personal touches!
