No-Cook Cranberry Relish Recipe
  • Prep: 5 min. + chilling
  • Yield: 1 Servings

Ingredients

  • 1/2 cup fresh or frozen cranberries
  • 1/4 medium orange, peeled
  • 1 tablespoon sugar

Directions

  • In a blender, combine all the ingredients; cover and process until coarsely chopped. Cover and chill for 30 minutes or until ready to serve. Yield: 1 serving.

Nutritional Facts 1 serving (1 each) equals 81 calories, trace fat (trace saturated fat), 0 cholesterol, 1 mg sodium, 21 g carbohydrate, 2 g fiber, trace protein.

This cranberry relish is a quick, easy citrusy change from some of the traditional cranberry recipes. It adds a bright finish and teams well with poultry, venison or pork. Refreshingly lo-calorie and colorful, my children prefer this to cooked cranberries. We found that sugar substitutes work equally well without affecting the flavor or texture.
