Ingredients

  • 1 loaf (10-1/2 ounces) angel food cake, cut into 1-inch cubes
  • 2 packages (.3 ounce each) sugar-free strawberry gelatin
  • 2 cups boiling water
  • 1 package (20 ounces) frozen unsweetened whole strawberries, thawed
  • 2 cups cold 1% milk
  • 1 package (1 ounce) sugar-free instant vanilla pudding mix
  • 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
  • Chopped fresh strawberries, optional

Directions

  • Arrange cake cubes in a single layer in a 13-in. x 9-in. dish. In a bowl, dissolve gelatin in boiling water; stir in strawberries. Pour over cake and gently press cake down. Refrigerate until set, about 1 hour.
  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set.
  • Spoon over gelatin layer. Spread with whipped topping. Refrigerate until serving. Garnish with chopped fresh strawberries if desired. Yield: 20 servings.

Nutritional Analysis: 1 piece equals 92 calories, 2 g fat (1 g saturated fat), 2 mg cholesterol, 172 mg sodium, 16 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchange: 1 starch.

I have now made this several times, varying the fruit (and flavour of gelatin). It is very popular with my guests and family. One of my favourite combinations is to use frozen mixed berries in combination with raspberry gelatin, and using fresh raspberries as garnish on top of the dessert. Excellent recipe!

I have had so many compliments on this recipe, and this could be changed as far as what kind of pudding, what kind of fruit, what kind of Jello, I love it, and so does everyone else, I just don't know if I can print this off, and share it with eveyone where I live without causing a copyright infraction.

I made it with an angel food cake instead of the loaf. The gelatin with the strawberries when poured into the cake pieces ultimately turned it into a layer of goop. One could not discern the cake at all as it shows in the

picture. I will try it once more using the loaf.

I made it, invited the family over to help eat it as only 2 of us. They all enjoyed it. When I make it again I'm not going to use as much whipped cream, I wanted to taste the pudding more.I also only used a half of a cake as I'd used the first half in another strawberry/jello recipe I'd had for many years. My husband said this one is a keeper!

My husband loves this dessert! It is very easy to prepare. I like that it is a light and cool dessert low in calories. I'll probably make it quite often and would like to try it with banana or french vanilla pudding.

This is a wonderful recipe! Used this for a church dinner and everyone loved it! The only suggestion I would make is use fresh strawberries. If you are lucky enough to have any left over, it makes the cake to soggy.

I really like this easy and so good recipe. I have made it for my family and for 2 family reunions and been asked for the recipe at each reunion. This is really a keeper and a plus for diabetics.

No-Bake strawberry Dessert is realy good, I made it with Banana-cream pudding, it is easy to make and you do not have to have the oven on.

This was possibly the biggest disappointment for a recipe that I had ever tried. People ate the Cool Whip and pudding part.... and threw away the cake part. The angel food cake and jello part becomes a heavy, dense glop that is similar to chewing gum. I would never, ever make it again.

I made this with orange jello & mandarin oranges & it was a huge success! Very light, nearly sugar free! Great for diabetics. I use sugar free cool whip! You can use your imagination & make nearly any flavor! Mixed berry with frozen triple berry blend would be equally as good!!
