Next Day Turkey Primavera Recipe

Ingredients

  • 1 cup uncooked penne pasta
  • 8 fresh asparagus spears, trimmed and cut into 1-inch pieces
  • 2/3 cup julienned carrot
  • 3 tablespoons butter
  • 4 large fresh mushrooms, sliced
  • 1/2 cup chopped yellow summer squash
  • 1/2 cup chopped zucchini
  • 1-1/2 cups shredded cooked turkey
  • 1 medium tomato, chopped
  • 1 envelope Italian salad dressing mix
  • 1 cup heavy whipping cream
  • 1/4 cup grated Parmesan cheese

Directions

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute asparagus and carrot in butter for 3 minutes. Add the mushrooms, yellow squash and zucchini; saute until crisp-tender.
  • Stir in the turkey, tomato, dressing mix and cream. Bring to a boil; cook and stir for 2 minutes.
  • Drain pasta; add to vegetable mixture and toss to combine. Sprinkle with cheese and toss again. Yield: 4 servings.

Great recipe. I don't usually like asparagus, but I think I'd put more than what's called for the next time I make it. Thinking about adding celery.

A great way to eat asparagus as I don't usually like it. Easy to make and so delicious my 2 year old and 1 year old would eat it.

My whole family loved this recipe! The kids too, they even ate the asparagus! I too doubled everything. It seemed I would just be throwing out the remainder of the fresh veggies and saving the remainder of the pasta anyways, so why not use it up. For the four of us it was perfect with a salad. My daughter has claimed the leftovers for her lunch tomorrow! My husband even commented that this had much more flavor than he thought it would. This is a keeper!

I double the abount of pasta when I make this and there is still plenty of sauce to go around. This is one of the best recipes I have ever tried!

Wonderful, easy recipe. I didn't have asparagus, so I used sweet peppers. I didn't have penne, so I used bow-tie pasta. Still tastes great!

Wow. This was amazing. Best recipe I have tried in a long time, and even the kiddoes liked it. Next time I would use halved cherry tomatoes instead of the medium tomato, chopped. Just personal preference.
