Neapolitan Fudge Recipe

Ingredients

  • 1-1/2 teaspoons butter
  • 1 package (8 ounces) cream cheese, softened
  • 3 cups confectioners' sugar
  • 16 ounces milk chocolate, melted and cooled
  • VANILLA LAYER:
  • 1 package (8 ounces) cream cheese, softened
  • 3 cups confectioners' sugar
  • 16 ounces white baking chocolate, melted and cooled
  • 1 tablespoon vanilla extract
  • RASPBERRY LAYER:
  • 1 package (8 ounces) cream cheese, softened
  • 3 cups confectioners' sugar
  • 16 ounces white baking chocolate, melted and cooled
  • 1 tablespoon raspberry extract
  • 8 to 10 drops food coloring, optional

Directions

  • Line a 13-in. x 9-in. baking pan with foil and grease the foil with butter; set aside. In a large bowl, beat cream cheese until fluffy. Gradually beat in confectioners' sugar. Beat in the melted milk chocolate. Spread into prepared pan. Refrigerate for 10 minutes.
  • For vanilla layer, in a large bowl beat cream cheese until fluffy. Gradually beat in confectioners' sugar. Beat in melted white chocolate and vanilla. Spread over chocolate layer. Refrigerate for 10 minutes.
  • For raspberry layer, in a large bowl beat cream cheese until fluffy. Gradually beat in the confectioners' sugar. Beat in melted white chocolate and raspberry extract. Tint with food coloring if desired. Spread over top. Cover and refrigerate for at least 8 hours or overnight.
  • Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator. Yield: about 6-1/2 pounds.

This is a super good! I made it for Valentine's Party and used all sorts of decorations on top of each piece. It is high like the picture shows and makes a lot. I cut some diagonally. Next time I might half the recipe and make in a smaller pan. It is very rich but..simply delicious!

Tastes good but should not be called Fudge...maybe "Looks Like Fudge", but definitely is not Fudge.

this fudge is very good,excellent flavors.It is very eye catching,and i personally beleive that any flavor would be good rasberry,cherry,strawberry,banana,what ever each person has their own special preference when it comes to taste buds,the rasberry gives it an exquisite flavor.I think it is a winner in confections.

For the cream cheese question. try it without the cream cheese and let us all know how it comes out. cut the recipe in half. that way if its no good you don't you waste half the ingredients. Personally, I don't think you can omit the cream cheese.

Try using sweetened condensed milk-melt the chocolate chips with the milk like in other fudge recipes.

I would like to know the answer to the Cream cheese? but mixed with white chocolate, might be good, also agree with the strawberry comment? Sounds good,AND more neapolitian, its NOT raspberry.. sorry I reviewed (thats why middle score)without making, but was wondering about the cream cheese.

Neopolitan refers to the color combination. Who cares what flavor you'll be using everytime.

Neapolitan is supposed to be Strawberry, not Raspberry. I'll be using Strawberry to make this everytime.
