I found this recipe for hearty muffins in a cookbook I received as a Christmas gift years ago. Now my family often requests that I make these, especially after we go apple-picking in the fall.

Morning Glory Muffins Recipe

Ingredients

  • 4 cups all-purpose flour
  • 2-1/2 cups sugar
  • 4 teaspoons baking soda
  • 4 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 2 cups vegetable oil
  • 6 eggs, lightly beaten
  • 4 teaspoons vanilla extract
  • 4 cups grated peeled apples
  • 1 cup raisins
  • 1 cup flaked coconut
  • 1 cup shredded carrots
  • 1 cup chopped walnuts

Directions

  • In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Mix oil, eggs and vanilla; stir into dry ingredients just until moistened. Fold in apples, raisins, coconut, carrots and nuts.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 25-30 minutes or until muffins test done. Yield: about 3 dozen.

Nutritional Facts 1 serving (1 each) equals 283 calories, 16 g fat (3 g saturated fat), 35 mg cholesterol, 225 mg sodium, 33 g carbohydrate, 2 g fiber, 4 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

Delicious!! I've been using this recipe (with minor changes) for years. It is always requested when I cater to groups who meet in the mornings. I've cut back successfully on the amount of oil by using 1 + 1/2 cups applesauce and 1/2 cup of oil. My recipe calls for 2 grated apples and 4 cups grated raw carrots.
