Moist Bran Muffins cont.

1/4 teaspoon salt
In a bowl, combine the bran, yogurt, applesauce and milk; let stand for 5 minutes. Add egg substitute, brown sugar, molasses, oil and vanilla; mix well. In another bowl, combine the dry ingredients. Stir in bran mixture just until moistened. Fill muffin cups coated with cooking spray two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
Yield: about 1-1/2 dozen.
