Mocha Bars Recipe

Ingredients

  • 2 eggs
  • 1 cup vegetable oil
  • 1 cup cold coffee
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2-1/2 cups packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup (6 ounces) semisweet chocolate chips
  • 3/4 cup chopped walnuts

Directions

  • In a bowl, beat eggs, oil, coffee and vanilla. Combine flour, brown sugar, salt and baking soda; add to coffee mixture. Beat until smooth. Pour into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 375° for 30-35 minutes or until the top springs back when lightly touched. Sprinkle with chocolate chips and nuts. Cool before cutting. Yield: about 3 dozen.

I liked that it was easy, tasty, and used the big 15x10 pan so that there would be enough for a pot luck. I had problems with the chocolate chips and nuts that were put on AFTER it was done baking. They all fell off. I even tried placing back in the warm oven to melt on--still they fell off. The next time I will try adding the nuts and choc chips to the top right BEFORE baking.
