Minty-Watermelon Cucumber Salad Recipe

Ingredients

  • 8 cups cubed seedless watermelon
  • 2 medium English cucumbers, halved lengthwise and sliced
  • 6 green onions, chopped
  • 1/4 cup minced fresh mint
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • In a large bowl, combine the watermelon, cucumbers, onions and mint. In a small bowl, whisk the oil, vinegar, salt and pepper. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours. Yield: 16 servings (3/4 cup each).

Nutritional Facts 3/4 cup equals 60 calories, 3 g fat (trace saturated fat), 0 cholesterol, 78 mg sodium, 9 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchanges: 1/2 fruit, 1/2 fat.

Very good flavor. I accidentally cut basil from the herb garden instead of mint, and added it, and it was very tasty.

Great way to use watermelon. I followed the earlier suggestion to add the dressing just before serving. I also chilled the salad thoroughly beforehand, and kept it cold nestled in ice, as watermelon tastes so much better cold and makes a terrific contrast to hot BBQ'd foods. Definitely going in my recipe file.

What a fresh and delicious summer salad this is. I made it to take to a friend's house and everyone loved it. I suggest putting the dressing on just before serving for the best taste. Don't store any over night because the watermelon doesn't do well that long with the vinegar. That won't stop me from making it again, though. I'm taking it to my sister's 4th of July party and know everyone will love it.

Just made this last evening to take to a dinner at a friend's house. It was so fresh and delicious. Everyone loved it. One thing I would caution, is to put the dressing on just before serving and don't make more than will be needed because the watermelon doesn't do well overnight with the vinegar. This wouldn't stop me from making it again. It's just too good. I'm making it for my sister's 4th of July party and know everyone will love it.

This was the perfect dish for a hot summer day. The mint with the watermelon and cucumber was so refreshing And the green onions added just a hint of zing. I loved it, my family loved it and we will definitely be making it quite often. It's going to be the perfect dish for a summer pot luck too.
