Mini Pizza Cups Recipe

Ingredients

  • 1 tube (11.3 ounces) refrigerated dinner rolls
  • 1 can (8 ounces) pizza sauce
  • 1/4 cup finely chopped onion
  • 1/3 cup finely chopped green pepper
  • 2 ounces sliced turkey pepperoni, chopped
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese

Directions

  • Separate dough into eight rolls; cut each into quarters. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray.
  • Spoon pizza sauce into each cup. Sprinkle with onion, green pepper, pepperoni and cheese. Bake at 375° for 15-18 minutes or until crusts are browned and cheese is melted. Yield: 32 appetizers.

Nutritional Facts 1 pizza cup equals 44 calories, 1 g fat (1 g saturated fat), 4 mg cholesterol, 134 mg sodium, 6 g carbohydrate, trace fiber, 3 g protein. Diabetic Exchange: 1/2 starch.

My store doesn't carry the dinner rolls in a tube, so I used frozen dinner rolls, cut in quarters. I was making these for picky kids, so they just had sauce and cheese and were fantastic! Easy and tasty.

What a great looking recipe. I would definitely make these, but I think I'll make them in full-sized muffin cups, instead of as mini-muffins. You could put any toppings inside of these. I might even try this with refrigerated pizza dough. YUM!!! Pizza on the go!!!

I usually use the biscuits instead of the dinner rolls and yes, I have frozen them. They are great!

I don't see why they can't be frozen! I freeze a lot of things for quick convenience on those busy weeknights! I would probably freeze them in a ziploc bag so you can grab the number you need each time. I think it would be great for school-age kids... they can grab a few from the freezer and pop in microwave for 30-45 seconds for a super yummy after school snack! I would put the microwave directions on the bag with a permanent marker so they don't have to try and remember how long!

These sound great, can they be frozen so they can be pulled out, zapped for a quick snack?
