I found this recipe a few years ago and tried to make it with it with a few changes. I'm diabetic, and this fits into my low-carb and low-fat diet. Every time I serve a brunch, the frittatas are the first thing to disappear, and nobody knows they are low fat! —Susan Watt, Basking Ridge, New Jersey

Mini Ham 'n' Cheese Frittatas Recipe
  • Prep: 15 min. Bake: 25 min.

Ingredients

  • 1/4 pound cubed fully cooked ham
  • 1 cup (4 ounces) shredded fat-free cheddar cheese
  • 6 eggs
  • 4 egg whites
  • 3 tablespoons minced chives
  • 2 tablespoons fat-free milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Divide ham among eight muffin cups coated with cooking spray; top with cheese. In a large bowl, beat eggs and whites. Beat in the chives, milk, salt and pepper. Pour over cheese, filling each muffin cup three-fourths full.
  • Bake at 375° for 22-25 minutes or until a knife inserted near the center comes out clean. Carefully run a knife around edges to loosen; remove from pan. Serve warm. Yield: 8 frittatas.

Nutritional Facts 1 frittata equals 106 calories, 4 g fat (1 g saturated fat), 167 mg cholesterol, 428 mg sodium, 2 g carbohydrate, trace fiber, 14 g protein. Diabetic Exchanges: 2 medium-fat meat.

Slightly modified this for 1 person. I used a ramekin and it turned out great. It was a great way to use leftover Easter ham. Easy and delicious!

I know this may like I can't read directions, but here goes....So, I do need 10 eggs, 6 to use whole, and four extra ones for the whites, discarding the extra yolks right?

This recipe was GREAT. I am on low carb way of eating and these are a great change for breakfast or lunch. They are very flavorful. Love the idea of making them in muffin pans......I can change the meat instead of having nothing but ham. Love this recipe!!

The recipe calls for 6 eggs and 4 egg whites, that means you'll have 6 egg yolks and 10 egg whites.

The directions aren't clear. Is it 6 eggs - 2 of them are just egg whites or 10 eggs - 6 whole and 4 just egg whites?

Very yummy! I used sausage instead of ham, and it worked great! Just make sure to grease muffin cups well.

These were great! I cheated and bought the ham in my grocery store's salad bar (pre-cooked and cubed, and you can buy only what you need). A great dish for overnight guests!

My family enjoyed them. I loved them. I did leave out the chives mainly because my son is so picky. I used a full package of the diced cooked ham. I also had the equivalent of 1 dozen eggs. I made 24 muffin size Frittatas. Definitely a keeper in my book!

These were very flavorful even after substituting with a pint of egg substitute, finely chopped canadian bacon and swiss cheese, skipping the milk. They are easy to store in fridge to eat throughout the work-week and by simply popping a couple of them in the microwave for 1 minute. Yum!

To lower the cholestrol amt. in this recipe, I would use egg whites and a few drops of yellow food coloring. My dh eats his eggs like this all the time and it cheaper than buying eggbeaters.

When making this recipe can you safely freeze the excess as there is only 2 of us but I would like to try this and have extra for other mornings.
