I found this recipe a few years ago and tried to make it with it with a few changes. I'm diabetic, and this fits into my low-carb and low-fat diet. Every time I serve a brunch, the frittatas are the first thing to disappear, and nobody knows they are low fat! —Susan Watt, Basking Ridge, New Jersey

Slightly modified this for 1 person. I used a ramekin and it turned out great. It was a great way to use leftover Easter ham. Easy and delicious!

I know this may like I can't read directions, but here goes....So, I do need 10 eggs, 6 to use whole, and four extra ones for the whites, discarding the extra yolks right?

This recipe was GREAT. I am on low carb way of eating and these are a great change for breakfast or lunch. They are very flavorful. Love the idea of making them in muffin pans......I can change the meat instead of having nothing but ham. Love this recipe!!

The directions aren't clear. Is it 6 eggs - 2 of them are just egg whites or 10 eggs - 6 whole and 4 just egg whites?

Very yummy! I used sausage instead of ham, and it worked great! Just make sure to grease muffin cups well.

These were great! I cheated and bought the ham in my grocery store's salad bar (pre-cooked and cubed, and you can buy only what you need). A great dish for overnight guests!

My family enjoyed them. I loved them. I did leave out the chives mainly because my son is so picky. I used a full package of the diced cooked ham. I also had the equivalent of 1 dozen eggs. I made 24 muffin size Frittatas. Definitely a keeper in my book!
