Mini Cherry Muffins

3/4 cup butter, softened
3/4 cup sugar
1 egg
1/2 cup plain yogurt
1/2 teaspoon almond extract
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup red candied cherries, chopped

In a small mixing bowl, cream butter and sugar. Beat in the egg,
yogurt and extract. Combine the flour, baking soda and salt; stir
into creamed mixture just until moistened. Fold in cherries. Fill

Mini Cherry Muffins cont.

greased or paper-lined miniature muffin cups two-thirds full. Bake at
350° for 15-17 minutes or until a toothpick comes out clean. Cool
for 5 minutes before removing from pans to wire racks.

Yield: about 2 dozen.
