Acorn squash is 1 of my favorite veggies. I think this will be in my rotation of how to fix it for a long time.

Acorn squash is one of my favorite winter squash. I love eating it with butter itself, since butter already contains a bit salt I just don't add any to it. To make more flavorish I would add a pinch of cinnamon to it and it just tates so great. There are so many ways of eating it, whether from plain to spiced or sweet, they all taste great. I highly recommend it. :-) yum

Loved this recipe, but my kids found it a bit "spicy" (which was from the pepper). I like spicy foods, but in my opinion, the pepper interfered with the wonderful sweet taste of the acorn squash and the honey / brown sugar "dressing". Would make it again in a heartbeat - fast, easy, nutritious and delicious.Dave
