Mexican Lasagna Recipe

Ingredients

  • 2 pounds ground beef
  • 1 can (16 ounces) refried beans
  • 1 can (4 ounces) chopped green chilies
  • 1 envelope taco seasoning
  • 2 tablespoons hot salsa
  • 4 cups (16 ounces) shredded Colby-Monterey Jack cheese, divided
  • 12 ounces uncooked lasagna noodles
  • 1 jar (16 ounces) mild salsa
  • 2 cups water
  • 2 cups (16 ounces) sour cream
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • 3 green onions, chopped
  • 1 medium tomato, chopped, optional

Directions

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in beans, chilies, taco seasoning and hot salsa.
  • In a greased 13x9-in. baking dish, layer a third of the noodles and meat mixture. Sprinkle with 1 cup of cheese. Repeat layers twice.
  • Combine mild salsa and water; pour over top. Cover and bake 1 hour or until heated through.
  • Top with sour cream, olives, onions, tomatoes if desired and remaining cheese. Bake, uncovered, 5 minutes. Let stand 10-15 minutes before cutting. Yield: 12 servings.

The adults in our family really enjoyed it. Too much color and pieces for the little ones. We only had one pound of beef. Two pounds would have been better when it came time to spreading it out on the noodles. I also left out the chilies because I have a wimpy tongue. My husband asked for them specifically the next time.

Only used 1 lb of ground beef and it worked fine. this was really good and was a big hit with the whole family.

This is definitely a family favorite at our house! I've made it the way it's written, and I've also made it vegetarian style, using soy crumbles and vegetarian refried beans, and it was a big hit, too. Awesome recipe!!

In order to make it more Mexican tasting I used corn tortillas instead of noodles and omitted the water and it is delicious!

This was wonderful! I made it for a monthly potluck get-together last night and it was nearly all eaten except for a little bit that I had to scrape off the sides of the dish which I will enjoy for lunch today! I used a Mexican four-cheese blend and also added more mild salsa to the ground beef mixture to make it more spreadable. I used more cheese than called for, too. I'll probably serve the sour cream on the side next time. This is easy and delicious . . . a definite keeper!

Definitely a keeper!! Mexican food is my favorite, and this was fairly easy to prepare. After reading other reviews, I was a little concerned about whether the noodles would be fully cooked. I added an extra 1/2 cup of water to the water/salsa mix and it turned out great! It was so good that my boyfriend and I both had seconds! I also took a piece to work the next day for lunch and it microwaves well too. Thanks for the recipe!
