The recipe, as written, was really good. I made this for the first time for an adult luncheon and it was a bit hit. I thought it was really tasty but a little on the heavy side. I think next time I make it, I will use a different type of salsa, like a corn and fire roasted tomato - any salsa with more vegetable variety. The olive/onion/tomato topping is a must and adds great lightness, flavor and color. I added a bit of fresh, chopped cilantro to it as well. Served with a side salad and plain greek yogurt (instead of sour cream).

This recipe was oh-so-good! I made it for Cinco de Mayo, but will definitely make it again before the next one! Very easy, too. I was worried that there was not enough liquid to cook the noodles, but it turned out perfect. And when you add the tomatoes and green onions and olives with the cheese, it was so pretty, too! Leftovers were great as well.

I made this tonight, for Cinco de mayo tomorrow. I incorporated several changes that the other reviewers used, and it turned out great, with some to spare for leftovers. It is a keeper!

I have been making this recipe for years since seeing it in a Taste of Home book. My family absolutely loves it and we have it at least once a month. The only thing I do different is to use just 1 pound of ground beef and one of those large 32 ounce cans of refried beans - we liked the lower beef to bean ratio. I also only put olives on half because we have olive-haters in our household. Other than that, this is THE BEST Mexican Lasagna hands down that I've ever had. It comes out perfect every time.

This dish is pitch-in worthy! I'd share this with friends and family without hesitation. I substituted two finely choppped jalepenos for the can of chilis and would probably add more the next time I cook it. Used Mexican and Taco Cheeses, 4oz of taco seasoning from a container (didn't have a packet). Whole wheat lasagne was also used. Remaining aspects of the recipe were followed and resulted in a delicious delight...

What's not to love in this recipe? I used corn tortillas (6 per layer, overlapped) instead of lasagna noodles. I also substituted Cholula Hot Sauce for the hot salsa. Only used 3 cups of cheese, and 1 and 3/4 cup water with the jar of salsa. I was afraid it would be too wet, but it was just perfect! When the casserole came out of the oven, I sprinkled it with cheese and let it sit for a good 30 min to 'set'. I let my family garnish it themselves with sour cream, green onions and olives. Next time we will make some guacamole as a side! Hubby and daughter loved it, and declared it a keeper. It's not fancy, it's just good TexMex comfort food! Oh by the way...if you're on WW, it is only 8 PP per serving (if 12 servings) when made with 93% lean ground beef, full fat cheese, and 2 Tbl full fat sour cream as a garnish!

Yum! This is so good. I added extra salsa to the meat as another reviewer recommended, also added a can of drained and rinsed black beans to the meat. Instead of the 2 tbls. of Hot salsa, I used taco sauce iI had in the fridge. The pan I used was a little bit larger than the recipe stated so I just used enough uncooked noodles to cover each layer. I left about a third of the pan without sour cream for my picky teenagers, but I put all the toppings on as stated on the rest of the pan and baked the 5 minutes in the oven. This does need to stand for a good 15-20min. before cutting into it, it helps to make nice slices! Enjoy, this is so good! I served with spanish rice and a green veggie.

The adults in our family really enjoyed it. Too much color and pieces for the little ones. We only had one pound of beef. Two pounds would have been better when it came time to spreading it out on the noodles. I also left out the chilies because I have a wimpy tongue. My husband asked for them specifically the next time.

This is definitely a family favorite at our house! I've made it the way it's written, and I've also made it vegetarian style, using soy crumbles and vegetarian refried beans, and it was a big hit, too. Awesome recipe!!

This was wonderful! I made it for a monthly potluck get-together last night and it was nearly all eaten except for a little bit that I had to scrape off the sides of the dish which I will enjoy for lunch today! I used a Mexican four-cheese blend and also added more mild salsa to the ground beef mixture to make it more spreadable. I used more cheese than called for, too. I'll probably serve the sour cream on the side next time. This is easy and delicious . . . a definite keeper!

Definitely a keeper!! Mexican food is my favorite, and this was fairly easy to prepare. After reading other reviews, I was a little concerned about whether the noodles would be fully cooked. I added an extra 1/2 cup of water to the water/salsa mix and it turned out great! It was so good that my boyfriend and I both had seconds! I also took a piece to work the next day for lunch and it microwaves well too. Thanks for the recipe!

I used no bake lasagna noodles and substituted spicy fat free refried beans - if you do this you don't need the taco sauce. Because of the no boils, I also cut the water by 1/4c. Turned out great!

I used about 24 oz. of crumbled soy instead of ground beef and reduced the cheese to about 2 cups. I also added 3 drops of Tabasco sauce to the 2 T. of mild salsa. Everyone loved the recipe! With only two of us, there was plenty for leftovers.

Turned out very good. We like spicier food so I used a pkg. of hot taco seasoning and then used medium salsa. The noodles were a little more firm than my husband prefers so next time I'll add just a little more water and bake longer.

I divided it into two smaller dishes and put one in the freezer. I put crushed tortilla chips ontop which was nice. I actually forgot to cover it, it still turned out great!

I made this on 5/25/12 and it turned out great. The only change I made, I used mild salsa, omitted the hot sauce by accident, but I did add a can of Rotels tomatoes with green chili's. This was, really, really good. I didn't have a problem with the refried beans making it too thick, perhaps because I did add the tomatoes and green chili's. Will definitely make this again. Also, I used regular "uncooked" lasagna noodles. I covered with aluminum foil and baked for one hour. That's why the recipe calls for so much water and salsa, the you are using uncooked noodles. Don't worry. They cook up beautifully. Great dish and reheats great too.

Fantastic! My stepson and daughter said it was really good. My husband liked it, but he said it was a little too spicy for him. It is definitely a keeper for me.

I have been making this for a long time only instead of lasagna noodles, I use the large flour tortillas, cutting as needed to fit your dish. Everyone loves it. Serve with xtra taco toppings if desired

I thought this recipe was pretty good, although I wish the layers didn't all have the exact same filling. I was a little skeptical of using the uncooked lasagna noodles, but they turned out perfectly in the end. The only change I made in the recipe was that I used 2 tbsp. of hot sauce instead of hot salsa. I also added my toppings (tomatoes, green onions, and sour cream) after I let the lasagna stand and cool. I did not heat it up further like the recipe suggested. All in all, I'd say this was a pretty decent recipe. My husband loved it and I will most likely make it again. It was a nice change from traditional lasagna.

This is sooooo good! Halved everything, except the cheese (used 3 cups, not 2) and made in an 8x8 dish using 6 oven ready lasagna noodles. Cooked some onion w/ lean ground beef. Also bought medium salsa for the entire dish instead of hot/mild salsa as per recipe. Once cooked added more cheese, sliced black olives, a chopped tomato, green onions and fresh cilantro for topping, baked another 5 - 8 minutes. Served sour cream on the side. So tasty I'd serve it to company. Will definitely make this again!

Most ridiculously easy lasagna I've ever made! Absolutely amazing recipe! So yummy! Boyfriend gobbled it up and got seconds! And the best part is that is makes great leftovers too!

Wow! My family loved this! Would agree that the beans made it a little thick. I think I will make with black beans next time and half of the refried beans. This is a recipe that I will use over and over again.

While I admit to tampering with the recipe because I prefer shredded beef and detest so-called 'taco seasoning', I still think that this is much more work that it's worth. It tasted just like so many other 'taco salad' or 'taco-bean dip' recipes I've eaten over the years. It takes less time to prepare a 'taco meal' with the same ingredients (sans the noodles, of course), which is easier to serve and more friendly to various eaters personal tastes.

I didn't realize that the noodles were to be put in the casserole without cooking them first and so by the time I realized it I already had the dish assembled. I realized my mistake when I considered adding so much watery salsa before baking. In order to save the dish, I drained off liquid from my salsa-water mixture and added enough more salsa to make two cups. Thankfully, it turned out great!

I made only one minor change to this recipe. The beef/bean mixture seemed a little too thick and dry so I added a little tomato juice to it and we loved it. I used the regular lasagna noodles and I cut the recipe in half for the two of us. It was really good.

I was VERY skeptical about not cooking the noodles beforehand and having to pour two cups of water over everything. I even boiled water before chickening out and deciding to follow the exact recipe. Good thing I did. I turned out WONDERFUL! So delicious! I didn't use the refried beans- instead I used a can of black beans and a can of drained corn. I used 2 packs of taco seasoning instead, because I thought one wasn't enough for 2 pounds of beef. I thought the cheese topped with the water/salsa mix would be too slimy, but it didn't even affect it. I followed the recipe for the topping, but also added some crumbled tortilla chips. I would eat this every day if I could!

Hi Kensmoma, I havent made this recipe yet BUT, I am sure you are to use lasagna noodles that you find in the gropcery isle. They usually come in a box. The recipe calls for 2 cups of water and 16 oz salsa... this would be plenty of liquid to cook the noodles :)

I just tried this recipe and it is delicious. It also reminds me of nachos so I added shredded lettuce on top and crumbled up tortilla chips, and put salsa over that.Perfect way to make a different version of nachos. I also cut out one pound of hamburger since I really don't need that much meat anyway. I'll definitely make this one again!

I made this recipe for Cinco de Mayo. I only used 1 cup of water. Then added more cheese & onion to the layers. I served the sour cream/guacamore/lettuce/olives on the side. I served with mexican rice & the family loved it! Will make again!

You would use the noodles raw. That is why the recipe calls for pouring two cups of water over all.

I have made a dish similar to this for years using stale corn or flour tortillas and canned pinto or red beans. Oh, and I usually use ground turkey rather than ground beef. Great to freeze in individual portions for a night when you don't want to cook!
I will not be trying this one :( Tried a similar recipe using jumbo pasta shells once. Couldn't eat it. I found that pasta is not compatible with Mexican ingredients. Too pastey. Especially if using refired beans. I do like the reipes however layering the Mexican filling between tortillas.

I wish I could find a recipe that didn't have all the hot ingredients mixed in with the dish before it's cooked. I know that the true mexican dish does not incorporate all the hot spices. Hot sauces are on the side and an individual adds accordingly to their tastes. I know the sauces are habit forming and we tend to add more thatn we need. This dish sounds good. I am going to have to experiement with the spices. I wish I would have had the foresight to have written down my grandmother recipes God, I miss her cooking

It's not necessary to pay more for "no cook" lasagna noodles. The regular ones work just fine.

In the pasta section at the supermarket they have "No Cook" lasagna noodles. I'm sure this is what she used. Recipe looks delish.

I am going to assume she used the noodles that don't need to be boiled first because it says to bake for an hour. I use these when I make lasagna. They cost the same as the others and the extra bake time is so worth not having to boin noodles first. Less mess to clean up too. I can't wait to try this recipe.

I have been making a similar receipe for years. With mine I just mix the raw groud beef, refried beens and other dry ingrediants together then layer with the lasagna noodles. I will try some of the ingrediants that are not used in mine. I recently made it for a dinner held where there was not a stove. I put it in a large crock pot. Worked great.
