Born out of a need to rid the fridge of extras, this recipe is flexible. Add more corn to make it sweeter, if you like. You can also spice it up as hot or mild as you want.—David Mills, Indianapolis, Indiana

This is a delicious recipe. I added chopped roasted (peeled & seeded) Poblano chilies to the layers as recommended by a friend. This also freezes well.

Karen Buske is wrong, not one tortilla but three, then layer then three more. if you did one at a time it would be ten feet tall!!!

Trish101707, he is telling you to layer one tortilla with beef and bean mixture, corn and cheese than another tortilla with mixture and repeat with 3rd layer. This recipe is the best. My husband and I hosted a New Years Day party for 25 years and we supplied the food which was always Mexican. Thanks for another recipe to add to it.

Cannot rate yet because I haven't made yet. I can see what ekatiakarpova means about the tortillas. Do you place them in the bowl so they just overlap or should you put them in as 3 layers deep? Tortillas come in many sizes so I am not sure on that point. Then when you layer~should you use 3 tortillas then too?

To: ekatiakarpova who said there was no instruction about the tortilla's. This is direct from the recipe:Place three tortillas in a greased round 2-1/2-qt. baking dish. Layer with half of the beef, bean mixture, corn and cheese; repeat layers.

The beauty of this recipe is that it's easy to modify to your own tastes. If you like it, add more. If you don't like it, leave it out or add something else. Adjust it to your family tastes.
