Born out of a need to rid the fridge of extras, this recipe is flexible. Add more corn to make it sweeter, if you like. You can also spice it up as hot or mild as you want.—David Mills, Indianapolis, Indiana

It was good, but a little dry to me. Maybe I did something wrong. My husband and son loved it.

We loved it ! We just used a whole pkg ( 2 1/4 lbs) of ground chuck. That seemed to work ok for us. Delicious !

Loved how easy this was. Hubby likes it which is always a plus. I made it healthy by substituting fat free refried bean, low fat mozzarella. I used spicy taco seasoning.

This is a great recipe to fix in a hurry and one in which I usually have most of the ingredients on hand. I used corn tortillas and cut them to fit two complete layers. Also, this can be prepared ahead of time and put in the oven later! I will certainly be making this again because it was a big hit!

This has become my husbands favorite dish. I omit all the "optional" ingredients. I also buy 6 inch flour tortillas and use 3 stacked on top of one another for one layer. My dish is a good size for this. I also like to use extra salsa mixed with the beans.

This is a delicious recipe. I added chopped roasted (peeled & seeded) Poblano chilies to the layers as recommended by a friend. This also freezes well.

Karen Buske is wrong, not one tortilla but three, then layer then three more. if you did one at a time it would be ten feet tall!!!

Trish101707, he is telling you to layer one tortilla with beef and bean mixture, corn and cheese than another tortilla with mixture and repeat with 3rd layer. This recipe is the best. My husband and I hosted a New Years Day party for 25 years and we supplied the food which was always Mexican. Thanks for another recipe to add to it.

Cannot rate yet because I haven't made yet. I can see what ekatiakarpova means about the tortillas. Do you place them in the bowl so they just overlap or should you put them in as 3 layers deep? Tortillas come in many sizes so I am not sure on that point. Then when you layer~should you use 3 tortillas then too?

To: ekatiakarpova who said there was no instruction about the tortilla's. This is direct from the recipe:Place three tortillas in a greased round 2-1/2-qt. baking dish. Layer with half of the beef, bean mixture, corn and cheese; repeat layers.

The beauty of this recipe is that it's easy to modify to your own tastes. If you like it, add more. If you don't like it, leave it out or add something else. Adjust it to your family tastes.

I really liked the flavours and the simplicity of this recipe. I personally doubled the salsa and re-fried beans. My guests loved it too and took some of the left overs home with them.

Kids and hubby loved it. I used fat-free beans and low-fat cheese to reduce the fat/calories. Also never use packaged taco seasoning, so just used chili powder, onion powder and garlic powder, black pepper and a little salt to season the meat.

My family loves this recipe. I did make some changes. Instead of salsa, I used Rotel and instead of tortillas, I used tortilla chips. This is definitely a favorite at our house.

This is a very easy recipe to prepare. Very easy/quick prep for me since I always have ground chuck cooked ahead and in the freezer. Just remember to plan ahead on the up to 45 baking time and resting time. It does need to rest so it can be cut into easier. Very good flavors. I made just as the recipe calls for. I also made a tossed salad and put out extra salsa, sour cream and tortilla chips. A definite keeper!

Brought into work with me for a couple folks to try and they asked when I was making another one...I gave them the recipe ;o) THANK U! Had been looking for a long time for new ground beef recipes and this is DEF'LY a keeper! (made no changes in recipe)

Hey I just tried this recipe over the weekend. It was great! delicious! My family was so happy and pleased with what I did. They are crazy with mexican food casseroles like that of www.101lowcarbmeals.com/mexican-casserole that's why I constantly research for variations and other styles. Thank you so much!

Very good. I love trying new taco type casseroles and I will definately make this one again. My advice would be not to use 3 tortillas, only 2 per layer. The layer I used 3 tortillas was hard to cut. I did 3 layers instead of 2 in my Corningware 2 1/2 quart round baking dish. There was so much of the refried bean/salsa mixture that I knew it would have to be divided into thirds rather than halved. We topped with shredded lettuce and tomatoes. Sour cream would have been good on it too. Also only baked for 30 minutes.
