Melon with Minted Lime Dip

Ingredients
- 1/4 cup sugar
- 1/4 cup water
- 6 tablespoons lime juice
- 2 tablespoons minced fresh mint
- 2 teaspoons grated lime peel
- 2 tablespoons minced fresh gingerroot
- 8 cups melon balls or cubes
- MINTED LIME DIP:
- 1 cup (8 ounces) sour cream
- 2 tablespoons sugar
- 1 tablespoon lime juice
- 2 teaspoons grated lime peel
Directions
- In a large bowl, combine the sugar, water, lime juice, mint, lime
- peel and ginger. Add melon balls. Cover and refrigerate for 1-6
- hours.
- Thread melon onto wooden skewers or toothpicks. In a small bowl,
- combine dip ingredients. Serve with melon. Yield: 8 cups fruit (1
- cup dip).
