My friend Mary served these lovely appetizers at a summer gathering several years ago, and I adapted it a bit to my taste. It's a great August recipe when tomatoes and herbs are at their freshest! —Susan Wilson, Milwaukee, WI

The History of FetaFETA is a white, salty, semi-firm cheese. Traditionally it was made from sheep or goat's milk but is now also made with cow's milk. After feta is formed in a special mold, it's sliced into large pieces, salted and soaked in brine. Although feta cheese is mostly associated with Greek cooking, "feta" comes from the Italian word "fette", meaning slice of food.

Easy, taste so yummy and they look fancy. I did a thin layer of sour cream (could use creme fraiche) under the tomato and it made it abit richer. A nice side dish that looks like you fussed!

Mediterranean tomato bites are one my family uses when we have company and need a quick, easy group of appetizers. It's simple, easy and fun to make and the guests usually simply love it.

I made these tonight for an appetizer to use up some of our summer tomatoes. They were easy, delicious, and looked nice too. My husband was impressed, but I didn't tell him how easy they were ; )
