Ingredients

  • 1 pound lean ground beef
  • 8 medium carrots, julienned
  • 1 medium green pepper, julienned
  • 1 envelope onion gravy mix
  • 2 firm fresh tomatoes, halved

Directions

  • Shape beef into four patties. Place each on an ungreased 14-in. square of heavy-duty foil. Arrange carrots and green pepper around patties. Sprinkle with gravy mix. Place a tomato half, cut side down, on each patty. Fold foil around meat and vegetables; seal tightly. Place on an ungreased baking sheet. Bake at 350° for 45 minutes or until meat is no longer pink. Yield: 4 servings.

    It's simple to take Meal in a Packet with you on a picnic. Assemble the packets and put them in a cooler. Grill over medium-high heat for about 1 hour or until meat is no longer pink.

Seeding Tomatoes

Summer is the perfect time of year to enjoy fresh juicy tomatoes in all types of recipes. It's usually not necessary to remove the seeds from tomatoes before using. But for some recipes, seeding the tomatoes can improve the dish's appearance or eliminate excess moisture. For example, it's not important to seed tomatoes when preparing a tossed salad. But it's nice to remove the seeds when making creamy tomato soup to ensure a smooth texture. And using seeded tomatoes when assembling a casserole can prevent it from becoming watery. To remove the seeds from a tomato, cut it in half horizontally and remove the stem. Holding a tomato half over a bowl or sink, scrape out seeds with a small spoon or squeeze the tomato to force out the seeds. Then slice or dice as directed in the recipe.

A little bland. I would suggest spicing up the meat a little to give it more flavor.

These packets are an all-time favorite for camping and cookouts. Sometimes I include very thinly sliced potatoes.
