Master Baking Mix Recipe
  • Prep/Total Time: 15 min.
  • Yield: 12-15 Servings

Ingredients

  • 8 cups all-purpose flour
  • 2 cups nonfat dry milk powder
  • 1/3 cup baking powder
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 2 cups shortening

Directions

  • In a large bowl, combine the flour, milk powder, baking powder, sugar and salt. Cut in shortening until mixture resembles coarse crumbs. Store in airtight container in a cool dry place or freeze for up to 6 months.
  • Master Baking Mix may be used to prepare the following recipes (also found in Recipe Finder): Fruit Cobbler, Blueberry Quick Bread and Yellow Cake. Yield: 14-1/2 cups.

i made the recipe for yellow cake, using milk instead of water and 1/4 cup less sugar and i used cake flour. it worked very well.

The only thing I have ever used this recipe for is pancakes. I use 2 c. of the baking mix, 2 tbs of oil, 1 1/2 c milk, and one egg. They are mouth-watering and delicious, especially when you use part buttermilk.

I, too, had trouble with the Master Baking Mix. I made the Blueberry Quick Bread and when baked, it was very crumbly. I'm wondering if the use of shortening, instead of oil, is the problem. Any suggestions?

You need a HUGE mixing bowl to make the recipe in. It came out over the top of my KitchenAid mixer. I used this mix in the Yellow Cake recipe on this site and it came out horrible. I don't know if it was the Master Baking Mix that made the cake so bad or the Yellow Cake recipe that did it. It almost seems like this recipe is good for biscuits rather than any cake mix. I have no idea what to do with the rest of the batch I have sitting in my freezer.
