Ingredients

  • 1/4 cup dry white wine or chicken broth
  • 1/4 cup reduced-sodium soy sauce
  • 3 tablespoons honey
  • 1 tablespoon Crisco® Pure Olive Oil
  • 3 to 4 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon pepper
  • 1/8 teaspoon each dried basil, thyme and rosemary, crushed
  • 1/8 teaspoon dill weed
  • 4 orange roughy fillets (6 ounces each)

Directions

  • In a large resealable plastic bag, combine the wine, soy sauce, honey, oil, garlic and seasonings; add the fish. Seal bag and turn to coat; refrigerate for up to 1 hour.
  • If grilling the fish, coat grill rack with cooking spray before starting the grill. Drain and discard marinade. Grill fish, covered, over medium heat or broil 4-6 in. from heat for 5-6 minutes on each side or until fish flakes easily with a fork. Yield: 4 servings.

Nutritional Analysis: One fillet equals 136 calories, 2 g fat (trace saturated fat), 34 mg cholesterol, 259 mg sodium, 2 g carbohydrate, trace fiber, 25 g protein. Diabetic Exchanges: 4 very lean meat.
