Marinated Mushrooms

1 pound fresh whole mushrooms
1 large onion, sliced
3/4 cup olive or vegetable oil
1/4 cup white vinegar
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
Crushed red pepper flakes to taste

In a large bowl, combine all ingredients. Cover and refrigerate for 1 to 2 days.
Serve with a slotted spoon.

Yield: 6-8 servings.
